When the beast was first revealed at Minecon, I instantly thought of if it could be tamed. I thought of a way it could be tamed:

I thought the Illager Beast could be tamed. Here is my idea for the taming method, first you kill all the pillagers, next you put a pumpkin hat on and hold a totem of undead in your hand (the beast would think you are a illager). Than you keep right clicking the beast (like a horse) until it’s tamed. After you have tamed the beast, the totem disappears. You can ride the beast and use it in combat, or as mining/siege machine, because it can destroy blocks? If you ride the beast, you can only hold an item in your left hand, like a bow or shield, because if you left click with your mouse, you use the headbutt from the beast.
If you have more beasts than one, you can’t breed them, but you can heal them up by feeding them meat
