Minecraft could be improved using modern graphic features, and many mods have already showed us it is way better (eg optifine ligtning) . Of course, these features would be optional, and could be switched off in the settings.
An image is worth a thousand words, so here is the genuine Minecraft furnace. Good looking, but not enough to me.
Better lighting :
Basically improving the light animation with lit blocks (furnace, magma, glowstone, etc.) and items (torch). Reflection should also be taken into account to improve some blocks and items (especially ores like iron or gold, which would look awesome). Also, water lighting could use a lot of improvements.
Transparency :
Already in the game with colored glass, but why wouldn't it be applied to liquids like milk or potions ? Some mobs could also use it (slimes, blazes, vexes), and the diamond ore and items would be improved.
Depth
As transparency, it's already here through the chest and some 3D blocks like the brewing stand. Still, many blocks could be better with carved textures. Look at this and try to convince me that the default textures are great.

Better lighting can't happen until the lighting engine is rewritten. Sorry, but that's just how it is and no amount of suggestion is going to get around this.
I prefer the sharp, clean detail of BDCraft, and it has a very small "3d" texture pack that really only changes the models so you get the 3d of it while using the texture size of your preference. I'm currently using Faithful 32x because BDCraft isn't released for MC 1.13 yet. But I've seen "3d" resource packs that turn the 16x16 default texture into 3d, and I would guess Faithful has "3d" enhancement options as well. Some people prefer "default" and hate BDCraft, while I prefer its clean lines and cartoon style. I suspect as to textures, "The Mission" for Jappa is to get the textures "consistent" and "sane", but otherwise keep everything 16x16 "default", and "flat", and let people use resource packs to pick the look they want, including 3d models. I'm cool with that. In fact, in the videos from MumboJumbo, Xisumavoid, Gnembon, the list goes on... they tend to use Faithful and *flat*. It's a step up from default while keeping the texture so nobody would notice unless they were looking for it. They may use a texture pack that "cleans up" redstone to make it more clear what they are building so it is easier to follow the tutorial, but that's about it. No special "3d" model resource packs. My "guess" is that is thought to be a distraction as much as using BDCraft instead of Default or Faithful. In fact, I've seen videos using BDCraft, and I find it odd and distracting in those videos. I don't see Mojang departing from "Default" in a major way. Changing it with any of a zillion resource packs is simply too easy, changing default causing way more problems than anything Mojang would gain from it.
Lighting... as noted, lighting is being worked on. Bedrock was supposed to release an "HD" mode, but it has been placed on hold while some problems with the lighting engine are being worked out. I suspect Java is sorting out these issues as well. I use Optifine, and it has a number of shader packs that can be used with it. For those, I'd prefer to use a more "realistic" shader pack if I'm going to make a movie or something to show off. But *NOT* to play in. For normal play, I prefer to use a "cartoon" texture pack and a "cartoon" style of lighting. It's just easier on my eyes and easier on my brain. Hopefully they will sort out a better lighting system. I wouldn't complain at all if Mojang just bought out Optifine and built it into Vanilla, including the option for custom shader packs. But I'm not sure I would want to change my lighting for normal *play*.
But until Mojang gets around to updating the lighting engine, whatever the problem is for Bedrock, I'm content with what I have. I'll likely give custom shaders another go when Optfine for 1.13 is out. For now, it just isn't a major factor for me.

I'm not a pro about java, but I think rewriting the engine could be worth it.

Also, 99% of my suggestions can be achieved through mods, but I think it is shameful that Minecraft needs mods to be a decent game. At least Mojang could display something in the launcher to download mods and textures.

They have recently gotten tons of new people on the Java Edition team, a whole new team for Bedrock Edition, and all the people they want from Microsoft.

All of this would be awesome. I'm also really glad that it would be optional. The only thing I'd change is that not every block should become 3D. How about just these ones:

Though the 3D models can be done with resource packs, the other things in this suggestion cannot be done with just a resource pack. Consider the 3D model part of the suggestion a suggestion for JAPPA for the new textures.

Yeah, thats how it works. Even if they had 500 people working on bedrock, that would change anything on the java version.
And no: they cannot take any developer from Microsoft. Those developers are in other projects or even other companies. Microsoft Studios contains 10 game studios worldwide. think of them as mostly separate teams. Sure microsoft has enough money to hire new people, but if you have 9 women they won't give birth in 1 month, and throwing 10 programmers at rewriting the lightning eninge might even decrease the progression speed, because you'll introduce a communication overhead.
why is that an issue? Mojang has rewrited the world generation a lot, changed the block ID limit, and completely changed commands.
- changing commands, is a simple text parser. nothing really depends on it.
- world generation is a file format and a procedural world-gen algorithm. pretty much standalone. care a bit about backwards compatibility.
- block ID is a bit tougher, sure.
but with lightning, you'd have to rewrite the whole rendering engine (everything else would not make a lot of sense).
designing and introducing 1 new mob and 3 new blocks with the next update -> player base will mostly be satisfied with this. sure there are the "modded"-players who absolutely ignore the update, and there are players that spam this forum with not-new ideas every few months. but the playerbase is so large that those people can be savely ignored.
spending over a full year on rewriting the rendering engine, with the only visible effect being .... well. less transparency glitches?
absolutely not worth it.
visuals like shown in the image above, won't be in minecraft for at least the next 3 years. simply because minecraft uses a highly optimized voxel engine, and most of the visuals are onto that voxel engine.
you cannot open blender importing some cubes and minecraft textures and let blender render the scene in a few seconds-minutes and hoping that minecraft (which supports so much more blocks plus game logic and ai) can do it in realtime.

I agree they should at least update some of the textures especially some of the older ones such as the sugar cane.
