Needs revision to fix internal contradictions:
"glide and climb, but not fly": the ability to climb (ie. to gain altitude) in the air is the definition of flying.
How can it "pick up horses" and "bring them to its nest" , if it cannot fly?
If "They are unable to jump from water, and they drown quickly.", why would they "flap their wings and stop gliding once they are within one block of it [water]" ?
"giant pile of gold blocks and gold ore" is excessive.
"they run away if there is an exit, but if it is too narrow, they peck it to widen it. It there is no exit, they will peck out a cave to hide in." indicates the mob breaks blocks to modify the world to its purposes. Aside from current AI being unlikely to be up to the challenge, this would be game changing.

Rewriting (more than simple editing) to get away from the stream of consciousness presentation – not to mention breaking up and organizing the Wall-o-Text™ before posting is strongly recommended….
[The critter is also excessively chimaerical and the behaviors make it sound more like a roc, but these are (comparatively) minor points…. ]

I've always wanted gryphons/griffins to be in Minecraft, but not... in this way. I think the ability for them to remember nest raiders is a bit OP, and it's kind of redundant to have surface gold with the addition of those weird mineshafts. I also think its strange that this big-winged creature cannot fly (let alone be used as a flying mount), and its water-avoiding behavior is very abusrd. Finally, this creature's description doesn't bring a griffin to mind.

While I agree that there have been some big changes from being a stereotypical gryphon, I appreciate it when things are made a little more unique.
