If you're talking like Treecapitator, that would be kinda cool to see. Especially since that mod actually makes the leaves break immediately after chopping the tree, giving you several saplings (and in the case of oak trees, apples). I'd like to see this, especially if the axe takes damage for each log broken, to keep it balanced.

MC gravity is a very selective force; I see no compelling reason why trees should not float as do stone, dirt, and all but a few special blocks.
If realism is what is desired, the tree structure (the part above the removed block) should tip over; the lighter parts of the lower side breaking and the trunk and upper parts needing to be chopped into logs. [Note that felling trees in a forest should require a clear space to avoid having the tree 'hang' against one or more of its neighbors.]
By the same logic, the infinite cantilever ought be removed: as should the infinite strength in compression that allows a fencepost to support a mountain…
All 'do-able' [at various costs in programming and play complexity], but also giving a very different game than Minecraft.
