I think a shark like mob would be better in this case. While having sharks be in minecraft as a actual mob, Mojang did say no to that. Having something that behaves like a shark and vaguely looks like one would be better. Take the Guardian mob for example.

I know update aquatic already came out but I agree, I think sharks should be added in a bug fix update for 1.13, they have added features in bug fix updates such as 1.11.2 when they added iron nuggets. I have an idea though, they could drop shark fins and make armor that will make you swim faster. 100% support.
First I just want to state I am loving everything being added in the new Aquatic update, but I feel as if there has been a missed opportunity.
Why I believe sharks could be fun:
When most people think of what is the greatest threat in the ocean they think of sharks. I personally feel that as cool as the drowned are that they aren't that big of a threat for me while exploring the oceans. I would like to have a bit more of a challenge to face while trying to explore the oceans. Sharks could bring that challenge by being heavy hitters with a moderate amount of health to make the ocean bit more adventurous.
Drops:
Sharks could drop something like shark meet and a rarer drop being a shark's tooth. I think it would be cool if the shark teeth could be used to make a potion that would increase attack damage, but only underwater. This is similar to the rabbits foot drop that is only a 10% chance to drop and can be used to make the jump potion. Also, we already know that dolphins are being introduced into the game.
Shark and Dolphin Relationships:
In real life, sharks avoid dolphins so I was thinking that dolphins and sharks could share the same relationship that creepers and ocelots have. Straight from the Minecraft Wiki, "Creepers will quickly avoid ocelots and cats. However, this will not deter them from chasing a player, only keeping the creeper 16 blocks away." I believe sharks could do the same as the creepers do to avoid ocelots but avoid the dolphins instead.
These are just my thoughts, and I would love to hear everyone's else's opinions.

I agree with sharks being in the ocean, but with a caveat, there must be ways to avoid confrontation with them even if it means a craftable item or enchantment of sorts, such as frost walker on boots (but you also make it too inconvenient to explore underwater structures in doing so, so it's not as OP as it sounds), or use of a boat.
Sharks should definitely attack players who refuse to exercise caution when entering the vast open water environment. It would force people to be more careful and it would make boats far more useful than they are now, I don't feel like drowned with tridents provide enough challenge for crossing the sea, or sea guardians.
Alternatively, on hardcore mode they could be made to attack players regardless of whether they used a boat or not.
Even better is if they introduced a very hard difficulty mode that could be ran either with or without hardcore mode, which made any type of hostile mob/creature more dangerous in general.

TheRPGAdventurer has part of the reason, that being sharks dying in real life is a genuine problem and should not be encouraged in video games aged for children, but the specific reason given is that hostile mobs are meant to be fantasy creatures, not real ones.

1. We got Utopce, and these aquatic zombies are by far enough for hostile stuff.
2. We are existential threat to sharks already. Enough with scaring people with them, or they will go extinct IRL! Many don't even really attack humans, and overall they kill several times people less than coconuts falling from palms do!

They dont want to add sharks because they fear players will have a bad image of sharks and kill them and yall suggesting crafting recipes for their drops after killing them.
A big majority of the game is slaying mobs, passive or aggressive, and we don't see people going around killing real life animals because they did it in a video game.
But people would turn more and more a blind eye to extinction of endangered species like sharks that are being killed for business, and this business being shielded by a thick wall of fear towards "big bad scary fish that eats humans".
yes, but dose not every mob in the game basically drop something after you kill it that is used to help you advance yourself or survive.
I think that if we should kill stuff in minecraft for defense, it should be unnatural beings.
Instead, natural beings, especially endangered species, should be useful for utility and keeping them alive, not fuel fear that lets poachers thrive in real life.
On the other hand, you might build a grinder of non-existent beings, I don't care if you exterminate undead, spiders that would suffocate in real life by sheer weight, a failed pig model painted green or abhumans armed to teeth and who want to end your life and lifes of civilised normal abhumans and launch purposeful invasions for that reason.
You may butcher "least concern" farm animals too, that's not a serious ecological problem considering how easily you can get more.
