We already have buckets of lava and water. Both have their various uses. Working on my current projects, I thought of a couple more kinds of buckets that might be useful to some people. Especially those like me who don't spawn blocks to build things. So without further ado ...
Mud Buckets
Combine a water bucket with dirt to create, well, a bucket of mud! When poured out, the mud flows in a manner similar to lava (how far, etc). After a few seconds, the mud dries out into dirt again. Useful for filling in holes and terraforming an area. Makes dirt a little more useful. Optionally, maybe add in bone meal which would dump out cultivated dirt, ready for planing crops / trees.
Slurry Buckets
Combine a water bucket with clay and gravel. Pour it out, let it dry for a minute and you get cobblestone. A little easier / quicker than placing blocks in some cases. Granted, its not like cobblestone is hard to find so the result could be cement or regular stone. Makes gravel more useful.
Combine Sand, Soul Sand and a Bucket of water and you get quicksand
It is a liquid that pulls you down,slows you down and other stuff, when stepped in,

I like it... but it seems like a over complicated way to just "right-click and place some dirt or cobblestone" move and repeat.
Would like to see more uses for gravel though.
I see your point and did think of that. One of the reasons why, mainly with the dirt bucket, I suggested it was for the potential randomness it could generate when poured. Just let it flow and you have something somewhat natural looking.
To your point, either idea could be amped up a bit so that the amount of material created is enough to make it worth the effort.
