Time Amulet:
This one is very simple. It turns up the random tick speed to 20 but only in the chunk you are in.
Chorus Amulet:
Eating chorus fruit gives you 8 hunger points (4 hunger bars) and doesn't teleport you.
Speed Amulet and Jump Amulet:
Speed amulet makes.... I don't need to tell you do I? The jump amulet makes you jump 5 blocks.

Falling into the void transports you safely to land

-maybe instead an alumet of Gluttonny wich accelerate the eating process (the cake would be eaten all at once instead of being placed) and remove side-effects from foods such as the rooten flesh, the chicken and obviously the chorus fruit.
Void
-too specific, it would never be used. maybe an "instinct amulet" wih slows the time when you are near a danger (eg being near a cliff or being surprised by a zombie)
Magma amulet
-it should also make you faster in lava, and the effect could also apply with fire
Enchanting
-this kind of thing should not be a wearable item, more like a block of "risky enchanting table" that you would find in some dungeons
Miner
-love it, it will make the game less annoying
Diamond
-too specific, maybe an amulet wich mess up the drops (for example coal ore will sometime drop diamonds, pigs will sometime drop chicken, leaves will drop sugar, etc.)
Also, how to you plan to acquire these amulets ? Should they be craftable, or only found in dungeons ?

I don't see this as useful for farming (where the mobs are enclosed), more for hunting (where one is attempting to capture breeding stock).
For Rabbits, suggest halving the avoidance distance for players without carrots/flowers from 8 to 4 blocks
For Ocelots, suggest increasing the taming chance (from 1/3 to 1/2 ) and decreasing the 'startle distance' from 6 blocks to 3.
For Parrots, suggest the player be treated by the parrots as a neutral mob causing the parrots "crowd and settle around" the player.
For Wolves, suggest this amulet provide a hostility cooldown similar to that of Zombie Pigmen.
For Horses/Mules/Donkeys/Llama, suggest the animal's temper increases by 8 (rather than 5) on each ride.
For others, no effect.
Time Amulet:
This one is very simple. It turns up the random tick speed to 20 but only in the chunk you are in.
Very interesting… I can see many uses for this.
The limited AoE is good, but IMO there should also be a downside to its continuos use; perhaps it should apply Hunger I [0.1 saturation loss per second] while in use…

This would double the hunger value [saturation is not mentioned] and remove the teleport feature.
Suggest removing the bump in food value and making the teleport suppression feature probabilistic; i.e. the chance of teleporting is

Level II >> 50 %
Level III >> 25 % (maximum level)

Speed Amulet:
Walking with a Speed Amulet acts as normal sprinting i.e. "5.612 meters/second, 30 percent faster than the normal walking speed of around 4.317 m/s" while sprinting with a Speed Amulet increases this to 6.000 m/s [an additional 30% of the 1.295m/s increase].
Thus, walking with a Speed Amulet "will reduce the player's saturation, and once their saturation is 0 it will deplete the hunger bar at a rate of 1⁄2 every 40 meters, or 7 seconds." while sprinting with a Speed Amulet "will reduce the player's saturation, and once their saturation is 0 it will deplete the hunger bar at a rate of 1⁄2 every 30 meters, or 5.25 seconds."
(Removing the "Sprinting will also end if the hunger bar lowers to 6 () or below." feature of normal sprinting might be a useful offset to this amulets helpful effects.)

As this is already available via Potions & Arrows of Leaping and as the Jump Boost Beacon buff, this would seem an unnecessary addition, although a version that increased jump ability without reducing fall damage might be viable….
Void Amulet:
Falling into the void transports you safely to land
Reading "transports you safely to land" as teleports the player to the nearest unobstructed solid topped block (eg slabs and lanterns count).
I consider this overpowered as it removes the main obstacle to working in the End.
Provided this amulet was modified to be sufficiently difficult to obtain and to vanish after a single use, it could offer an effect more powerful (but of more resticted applicability) than the Totem of Undying. [Most likely this would mean linking obtaining the amulet to a non-respawning mob.]
Magma Amulet:
You are immune to lava
"Immune" seems overpowered, suggest this acts as FireProtectionN [N = I to IV] armor (possibly with respect to lava {or lava & magama block} only).
Enchanting Amulet:
Right clicking while holding an enchantable item has a %25 to enchant it but a %75 chance to CURSE it
Might be viable depending on the details (what enchantments, at what levels, at what cost {if any}).
From only the description given, this seems like a low powered [due to the 75% curse chance] but still too easy bypass for enchanting tables / anvils.
The only use I can see for this is in extremely resource restricted games where diamonds/obsidian/iron are effectively unavailable.
Miner's Amulet:
You get faster at mining the more you mine. If you don't mine for 10 seconds this stops.
Intriguing; the compensating downside being unintentional mining [as with Efficiency and NetherRack].
I'm not sure how the ramp-up and ramp down of mining speed could be implemented… perhaps each stone/ore block broken has a percentage chance to increase the effect towards a maximum…
Ten seconds seems to have been chosen to allow this to improve the speed for unenchanted diamond picks vs obsidian [normally 9.4 seconds required to break] ; were this reduced (perhaps to 2) one would need to mine easier blocks to 'turn-on' the effect then switch to obsidian.
This would also may 'over-mining' more likely for less tough blocks.
Alternate mechanics
one possibility would be to treat this as adding one level of Efficiency to any tool used [making Efficiency6 possible]
another would be to treat this as adding one level of Haste to any tool used [making Haste3 possible]

Having this not stack with the Fortune enchantment is a good and needed limit, but the two effects should also be mutually exclusive (i.e. a player can not use both at once) so that wielding both a Fortune Pick and an Amulet does not result in two increase checks. [Note: this would mean each item would need to check what other items were equipped, which may be a coding complication.]
Average yield from minining 100 ore with this should be 135 which is close to the 133.33… expected with Fortune I and this would only effect diamond yields.
General:
A lot of good/intriguing ideas here (while clearly linked, each may merit seperate discussion).
I've (generally) limited my comments to the described effects, but how these can be obtained/crafted is also of importance.
Most of these have the potential to be overpowered (and also to be viable additions to the game); the Devil (as the saying goes) being in the details…

considering that Mansions are already rare, i would rather these be uncommon-common. Perhaps they could be dropped by illusioneers.

Void amulet way too OP. Calming amulet OP. Magma amulet OP and repetiitve. Enchantig Amulet OP becuase you could keep on enchanting books and keeping the ones u need and getting rid of the cursed. The only ones I like are the time and mining amulet.

Calming amulet is a pretty interesting concept.
Time Amulet is sort of complicated.
Chorus Amulet might make End survival a bit too easy.
We already have beacons for the speed/jump amulets.
Void amulet is way too OP.
Magma amulet is a bit like the potion?
Enchanter amulet might not be favored over the enchtable.
Miner's amulet would be useful to dig out mines or underground bases.
Diamond amulet is, again, OP.
