My definition of a "dungeon" is those small rooms with an enemy mob spawner in the middle and treasure chests.
I found that these are not challenging at all. The fastest way to beat them is count the blocks to the center of the room, and tunnel under the floor, coming up underneath the spawner, and destroying it with no risk at all to you.
My suggestion is to make the treasure rooms a bit bigger, place the spawner 3 blocks in the air ( it floats ), and make it so that any block placed or dropped into the room is vaporized.

Or you could make them not challenging by just turning it to peaceful and grabbing everything. Sure the dungeons aren't fearsome and difficult if you are careful, but that comes with getting better at the game. I remember when I first started a Zombie Dungeon not so far away from spawn was like an ultimate boss battle for me. Now, it's just "place torches, collect loot, and then create a mob farm or Zoo."
I would like the rooms to be bigger too (more Mossy Cobblestone), the floating mob spawner sounds good, but the "vaporize any placed block needs to be described more and in better detail. Does this mean repairing conquered dungeons is impossible, or that dispensers, glass or netherrack cannot be placed in them at all? It would be kind of bad to have areas in the game where blocks cannot be placed, especially in dungeons, which are the most interesting parts to find underground.
My main wish is for bigger dungeons to exist, that have 3+ mob spawners and carry more treasure, while also providing more challenge.
Agree with bigger dungeons that are harder to beat. Once you understand the game it is easy to beat dungeons and make them mob slaughter factories/ zoos(unless you try to fight a mob spawner with nothing).
about the "vaporized blocks" I mentioned ... That was because it is also easy to tunnel above the room, and drop sand / gravel on top and around the spawner, shutting it down.
