The aspidochelone is a 100m water mob that looks like a fish with a pair of legs with fins down the back, looking like flippers, giant fins, a long, and and a ceratopsian beak. They hide in false islands (which are islands with a water filled cavity that the aspidochelone hides in), and when someone breaks a block on the island, or get far enough away from a boat, the island is destroyed by the aspidochelone, and the aspidochelone attacks the player. The false islands are generally spike shaped and the stone has slightly higher contrast than normal stone, making them identifyable.

Oh yeah, and it doesn't fit in with the other incredibly simple mobs either.

This is longer than most people's render distance.
Also I hope you don't plan on this thing properly colliding with blocks, because large collision boxes and tiny blocks do not go together well.

I'm glad you've used a 7-8th grade vocabulary when writing this suggestion, otherwise I might have been really confused by your description. What the heck does this even mean??? And no, I'm not going to look it up, because that's something I expect you to do for me as a reader.

You know how big this water cavity would have to be in order for a one-hundred meter long sea creature to hide in? It would be larger than most Ocean biomes.

Have you ever installed mods with nuclear bombs or TNT with a bigger blast radius? Whenever you blow one up, it takes the game at least several minutes before the updated blocks are shown again. And those things might have a radius of around fifty blocks at the most.
This thing may not destroy things down to bedrock level, but this thing is destroying more blocks than the player might even have in his render distance.

If there is anything good about this suggestion, it's that these islands actually sound pretty cool, and I'd actually enjoy them as a biome similar to the Mushroom Island.
A creature too large for most people to see correctly, a scientific-sounding name that has a million syllables, thousands of block updates, nothing about this suggestion sounds good, except that your false islands might make a cool biome, considering the game only has two "fantasy" biomes. (Even then, the description of Stone Spikes sounds way too close to Ice Spikes.)
I get offtopic a lot, be warned. I also often mention a Minecraft clone called Minetest. The clone is nowhere near playable with it's default game in my opinion, but it's at least the start of a good open-source voxel rendering engine, and maybe one day it might be decently playable.
The Greek original translates as "shield-turtle" which at least fixes the name…
In addition to the points made above RE render distance & lag;
It sounds unkillable (at least without major cheats); it's so huge (bigger than an ocean monument) the only way I can think of to fight it is Summon Wither, let them duke it out, kill the injured winner .
I don't think the game needs another "ambush monster".
The End has Shulkers, & the Overworld (Extreme Hills) has Silverfish [Which I prefer in non-insta-break eggs… :rant-off: ]
Creepers also do a fine job of filling this roll....
