A freezer is basically a reverse furnace. It can be crafted with a furnace and a piece of redstone dust. The freezer can undo smelting. However, if an item can be smelted OR crafted in more than one way, it will not work. A freezer requires redstone power to run.

What is there to unsmelt that you can't just... not smelt in the first place? Also, freezers don't work that way, and there isn't really a good reason for them to break the laws of continuity (like, say, smelting metal back into ore) in this fashion.
This is kind of a weird idea and I don't see much reason for it. Also I'm concerned about Coal. It doesn't meet the limit of being smelted or crafted in more than one way (unless you could crafting a Coal Block into 9 Coal which would be silly as Coal Blocks don't exist unless you make them), so you could use this to take Coal and unsmelt them into Ore, Fortune 3 pickaxe them, then repeat.
Unless mining them also counts as an alternative way to craft, which should be better defined.

I don't think the idea of having a freezer is bad. But, I think it falls into that category of real world things that don't need to exist in the game because the laws of the fictional Minecraft world don't call for it.
Raw foods don't go bad in the minecraft world. I might put fish into chests or behind glasss with blocks of snow or ice just for show when building a village fish monger or something, but I don't need to handle the raw foodstuffs in any special way.
Having a device that generates ice lessens the incentive for players to explore and find a high altitude or cold biome where they can get snow or generate ice. I think that in designing the game, there's usually an attempt to give players incentive to go out adventuring. Like, needing green dye from a desert or needing brown dye from a jungle or needing to mine ice....
