This is to add a more aesthetic feel to the villagers. Sometimes, two villagers will walk up to each other. They will exchange a series of "hmm"s before dropping two different items respective to their class. For example, a trade could be wheat and some arrows between a farmer and a Fletcher. The two would pick up the items and then walk away.
Villagers already kind of interact with each other, and with items being dropped on the ground players could just run by and steal them, which would remove any use for villagers to have a trading system at all. No support.
Fair enough, but can I kill them before they pick up the traded items and take them for myself?

Ever saw those Villager farms that rely on Villagers throwing food to another Villager, where it drops into a water stream or hopper?
This is gonna make free item farms really easy to build, is what I'm trying to say.
The OP did also mention that two villagers will purposely go towards each other for this to activate. If they're stuck next to one-another it most likely wouldn't activate, or they'd move close enough that the hopper couldn't pick it up. Besides, the event would be rare enough that it wouldn't be worthwhile to collect them due to other means of obtaining that source, such as a villager wheat harvester for wheat or a mob grinder for arrows.

this is exactly the same as Villagers throwing food at each other works, and thus it will be exploited i the same way.
And rarity means nothing, if you can just throw dozens of Villagers in automatic item farms, that will probably also generate Iron and maybe even crops if you design it clever enough.
This would be broken, more broken than Villagers already are.
I've thought of some conditions for this.
It can happen randomly (about 6 villagers will trade a day), but if you trade with them (item for emeralds), they will trade with another villager the next day. There'd also be items villagers can't trade (weapon smiths can't trade enchanted or diamond items, same with armor smith and tool smith. Clerics cannot trade glowstone or ender pearls. Fletchers can only sell regular bows and don't trade many arrows (They will only give about 7 if they give someone arrows.)
I like the idea of villagers interacting somehow, in meaningful ways, but I don't think this is the right way to go about doing it. It doesn't make them feel properly alive, it just sort of seems... arbitrary.
