They would spawn in plains and savannah biomes, and if you get too close to one, all nearby bison will flee as a herd. They have 16 health (8 hearts), and the best ways to kill them are to shoot from a distance, catch up to them on a horse, or trick them into running into a death trap.
In honor of the Native American tradition of using every single part of a bison, these bison will drop everything: Bison skull, bison bones, bison meat, bison hide, bison bladder, and a bison tail. The skull can be worn on the head, and will provide as much protection as, and has slightly more durability than, a chain mail helmet. Alternatively, the skull can be crafted into bone meal. Bison bones can do anything that traditional Minecraft bones can do. Bison meat restores 3 hunger points (1 1/2 shanks) when raw, and, when cooked into bison steak, will restore 10 hunger points (5 shanks), and provide as much saturation as a normal steak. The bison hide can be crafted into armor which is a little better than leather, but not quite as protective as gold. However, this armor can be reinforced with bison bones to become as strong as chain mail armor. The bison bladder can be used as an alternative to a potion bottle, and can be used to brew level III potions (the brewing ingredient being a bison tail). The bison tail, alongside being used as the brewing ingredient for level III potions, can be used to craft a whip, which can scare away nearby mobs when used (and has limited durability). It can also be used in the place of string to craft a bow that is a bit more powerful and far more durable than the traditional Minecraft bow.
I'd say it starts off good but as soon as you get into it dropping a ton of stuff you started to lose me. My main problem with it is that all the items seem to be "the same as X item, only slightly better". That means you get a bunch of drops at once that are better than their normal counterparts, from a mob that doesn't seem that hard to find or kill.
Now if you cut out all the unbalanced fluff and just make it drop meat, bones, and leather I would like it more. The fact you get three guaranteed drops is more than good enough for such a simple mob.

Yeah you lost me here. This thing should drop only what it needs to drop and not to follow some tradition that doesn't match the game.
The skull doesn't have much of a point except to copy bones and helmets. The bison hide armor falls into the same trap as pretty much any other armor idea, in that it's just an in-between armor that's there just to be there. Same goes for the other bones this thing drops. The bison bladder/potion thing is just really, really weird and random. And most level 3 potions would be terribly overpowered. Using a bison tail to make a bow? Okay..? If bows can be enchanted we don't need a second kind of bow just because this bison exists.
