Endermen are some of the coolest Minecraft mobs, but there is still room for improvement. A small add-on to this suggestion is the idea of endermen in the End Islands naturally holding blocks from the overworld. What block an enderman is holding should affect its behavior.
TNT - This will make the enderman act similarly to a creeper, of course. When it gets close to you, the TNT will light.
Shulker Box - The enderman is now holding a real shulker that can open, close, shoot, and everything.
Magma - The enderman can set you on fire.
Dispenser - The enderman will act as a skeleton, shooting arrows out of the dispenser.
Slime Block - Gives the enderman highly improved knockback.
Cactus - Hitting the enderman while facing its front gives the thorns effect and you will take some damage.
Anvil - The enderman will attempt to gain the high ground (even if that means getting farther away) and then try to drop the anvil on you.
Ice - This prevents the enderman from teleporting. (The logic is that it knows if it teleports, the ice might melt and turn into water.)
Ores - This makes the enderman forget about killing you and it will run away from you to protect the block.
Observer - The enderman will get angry if it is near enough to a block update.
Endermen spawn in darkness > caves > ores. It's logic.

You're right. And - Endermen are in darkness. They could have got ores, right?
I agree w/ Mastermined, the slime and cactus ones sound good, but the others are either too annoying or require new AI that'd be better for a new mob. Though I'd like to see what mob could use the possible new AI for the anvil and ore protecting stuff.

Same reason a player doesn't when he holds it or touches the side of it. A magma block doesn't burn anything when that thing is not touching the top of it. This includes water, which by minecraft logic should at least be creating cobblestone if not obsidian.
Dispensers need redstone to activate, not just a mob holding it. This makes little sense.[/b]
I could see this happening on an occasional/random basis, as if the endermen were fiddling around with it (they're naturally curious, after all) and it went off accidentally. We know they come from another dimension and they have tentacles, but I'm not sure we really know what they're made out of so perhaps they can worm into things our more-solid bodies cannot.
This one is just weird. Why would an Enderman get mad a block updates around him. Not to mention the absolute hell of Endermen getting angry at you, because the grass near them has the guts to grow onto a new dirt block.[/b]
I can see the logic for this one. It's not so much the block that updated that triggers the endermen, it's the observer itself that does (ie, it looked at the endermen or at least the endermen perceives this to be the case). Maybe like the dancing parrots, this could be a (much more annoying) easter egg where the enderman gets angry at the observer block (ie, a fake player) and takes a few swipes at it--trying to pick it up but it can't and it ends up disabling it for a few seconds.
Some of these are okay, but I don't want endermen running away with the diamond ore I was going for. Hell no.
The Endermen must pack more muscles u know
Endermen Gym, i want the new endermen to lift weights, remove the TP ability i loath it.

Shulker Box - meh, endermen are already dangerous, so why giving them a ranged attack?
Magma - okay, as they can be in the nether too?

The slime and cactus sound fine, but I also do like the idea of an Enderman running around with a Shulker on its head.
