As we all know, jumping as you sprint makes you move even faster, for whatever reason, this should not be a thing, it makes no sense. Players just jump and sprint at the same time to move even faster, well I think this should be limited, like while sprinting, if you jump, when you hit the ground afterwards, you will automatically stop sprinting, and you will have to do it again. This will kind of balance it out to where it is the same speed as just normal sprinting, since you will stop after every time you jump and you will have to start sprinting again. It is either this or you just make sprint jumping no faster at all than just sprinting, take your pick.
I've never even noticed any increase in speed unless you are on ice or in a 2 block high tunnel, so I've never done it except in those cases, and even then your hunger does down so fast it is not really worth it, or if I actually need to jump while sprinting The Wiki doesn't even give a speed for sprint-jumping, and only mentions the cases that I have as trivia, saying that it can nearly double your speed. Sort of like spam-clicking, which I also never developed the habit of doing for similar reasons, especially when done when you can't even reach whatever you are hitting (plus prior to 1.7 it also had a big durability penalty if you actually did hit a mob that fast. Also, 1.7 fixed a bug that caused sprint-jumping not to drain hunger any faster than normal jumping (the fix increased it by a factor of 4, albeit 1.11 decreased hunger lost from both types of jumping by a factor of 4, thus back to the pre-1.7 level), which still was not enough incentive for me to do it, plus it makes you look silly). 1.7 also added a dedicated sprint key; prior to then you'd automatically stop sprinting after 30 seconds and had to double-tap W again to resume sprinting, probably to prevent you from continuously sprinting forever (or until your hunger went down, which would take longer than 30 seconds if it was full and you did not jump). Likewise, you'd also stop sprinting if you collided with a block or attacked something.
From all this I get the feeling that Mojang doesn't think it is unbalanced to constantly sprint-jump, and probably wouldn't do anything about it unless enough people complained (as in emailing them, not posting suggestions to this forum, or even Reddit).

Are you confusing balance with something else maybe? You don't have to start moving again after jumping while moving at normal speed. Even as a comparison it's kinda flawed.

This actually does make sense, because sliding friction on the ground is less than fluid friction in the air, therefore making you move faster in the air

There was nothing wrong with porcupining yourself to gain powered elytra flight, yet players almost-instantly and universally abandoned a highly-developed set of infrastructure that supported the feature. It was just silly to do, just like sprint-jumping is.
It's important to note that once everyone finally realized how dumb their amateurish quiver impressions looked, once they started clamouring for a fix Mojang didn't actually touch bow-powered elytra flight, instead electing to add a second means to generate it (rockets) that didn't look so silly.
The basic thrust of the suggestion, then, isn't actually to merely change/remove sprint-jumping but to add something in that players embrace as "a better way" (even if it's not or the change results in a net non-change). Not sure what the means to this would be, perhaps the hunger gap between sprint-jump and sprint simply needs to be increased somewhat significantly or perhaps like autojumping a new feature makes it so that you need only to initiate the run and guide with the mouse (autojumping and sprint-jumping would interfere with this.)

One does not necessarily have to stop running just to jump (as demonstrated by the hurdles in the olympics)

The feature is balanced. From personal experience, you consume more hunger sprint jumping than just sprinting or jumping alone.

You move faster but it drains your hunger like crazy. Any extended period of time sprint jumping makes you incapable of regaining health naturally.
It's balanced I think.

Balance? It's not over-powered nor under-powered; it's a simple mechanic, and sprint jumping already diminishes saturation much more comparatively.
