Its like a snow golem, resembles a snowgolem but instead of 2 snow blocks, it has 2 other blocks (idk what other 2 blocks could be). The melon golem shoots melon seeds at a rate of 1 seed every 0.1 second.
The HP: 8 hearts
Neutral (mainly attacks aggresive mobs):
damage per seed: half a heart.
Damage per second: 1 seed every 0.1 seconds means 1 heart taken out every 0.2 seconds. So *5 hearts damage per second*
Seems a bit to powerful, it could tear through an unarmored player (and therefore most standard hostiles) in about 2 seconds not counting invincibility frames. There is a reason why ranged mobs have a large delay in between attacks.

"A bit"? Those seeds might as well be nukes. This thing can kill you in seconds. There's really no need for more golems, and this is just a cheap copy of the snow golem. This melon thing puts even the Iron Golem to shame. No support.

Pumpkins make sense because they're often used as a head. People use them for scarecrows, the heads of snowmen, and in a few pieces of fiction such as the Headless Horseman. While melons would work, people don't generally associate them with heads.
Also, I'd prefer that the mob add some utility. Snow golems create snow, iron golems act as a source of iron and try to defend villagers. The third golem-like mob, the wither, drops a nether star and gives the player a fun boss fight.
What about 1 diamond block for the head, the rest watermelon? It would make it more difficult/fair.
Making an OP item more expensive doesn't save it from being OP. That's still 9 diamonds for something that can kill anything in range with no argument. (Okay, if it has a horde of targets, that might let skeletons get in a few shots, eventually taking it down.) Basically, it needs a slower rate of fire.

I did some CraftTweaker scripts for Mystical Agriculture. They fill in a couple of small gaps in MA, and also let you make or duplicate not only vanilla plants, but the blocks, plants and wood from Quark and Biomes O'Plenty. Also spawn eggs for most vanilla mobs! The scripts are here on Github.

5 hearts per second?! Jeez! That will kill most mobs/players in under five seconds!

I guess the seeds can cause some knockback. and do 1/4 heart per 4 seeds fired.
