We would have to make a new pig byproduct as coating a door with pig meat doesn't stop water from flowing (might have to try this later...). I like the idea of a water gate but it has been suggested more then enough times. Why don't we just make a reverse sponge?
That's what I was thinking when I first saw it....
On topic: I didn't see about the redstone activation. I would want to be able to leave the door open without having to stand on the plate. I would rather have it like doors are now where the player can close the door whenever.

so surround a door with some rubbery-material like a gasket:
the pork fat will act as a gasket
this door will be just like any door, but the block it occupies will allow water to flow if the door is open
