I have been bitten by the Minecraft bug and would like to offer my ideas to those who already know how to mod minecraft while I learn to do it myself.
Shields: My most wanted addition is shields that the player holds so they can more effectively defend against hostiles. I have been killed at a distance by one too may skeletons because I just couldn't get close enough to kill them.
Sloped tiles: Ramps or sloped tiles would be infinitely helpful in a variety of ways. It would allow for realistic roofs or a smooth incline for rails or as a path to walk on when stairs wouldn't look right.
Each block has a small variety of textures that it can pick from: This is to break up the monotony a little. Say you are digging through a huge patch of cobblestone. All around you is grey. I would like to see a random texture picked for each block.
Beveled on blocks or more geometrically detailed blocks: I'm not shooting for Crysis here. I would just like to see things a little less jagged. Instead of a cube with the minerals painted on, have a cube with smaller cubes protruding out of it. I'm sure it's in the works but normal/bump would work well here too.
More minerals/dangers: I would like the option of being killed by a gas leak if I break open a cave and I'm not prepared with a gas mask or other equipment. You could bring along a caged chicken and if it dies then you know to get out. I think it would be interesting to stumble across a uranium deposit and get radiation sickness. We have lava and water. How about oil?
Vehicles: I'm not really talking about cars but that would be nice too. I am thinking earthmoving equipment. I am in the process of digging a big hole down to the bedrock and it will take quite a while using picks. Dynamite is workable but too chaotic for my needs for this project.
Seismograph/cave finding equipment: I am aware of Cartograph and things like it but would like an ingame option so I wouldn't need to leave the game so often to check where I am.
Take all/sort options for storage objects: If I have a box of stuff or come across a dungeon I would like to be able to empty the chest with a single click.
More character customization: Hair, height, hooked hands, hats, and whatever else. I know skins are available but mining Marge Simpson hair may lead to some interesting fun.

As to your ideas, I would like to say personally that you are rather asking for minecraft to adopt a completely different style, and I think that rather misses the point.
I do hope you continue to contribute, however, and hope you look into some of the features that are more and better developed for inspiration.

I'm seeing a lot of dislike of the modern-ish things. How about giving cows and other animals a use besides armor and food? Make them do some of the work with plows or make them cart you around on wagons? With cobblestone roads you could have a bustling little city going. I kind of feel bad for slaughtering all creatures in my sight for raw materials and it would give them a more fulfilling life purpose than to grow up to be a smoke cloud.

We do have armour and diamond armour prevents ALL damage dealt, so this would be merely redundant.

The jagged look is the MC style, though if you go to a high resolution texture back down to the regular resolution it would probably seem less jagged for a while

Aren't fighting hordes of monsters in the dark dangerous enough(perhaps a harder difficulty then)? How would a caged chicken work(crafting it?)? Uranium should ONLY EVER be implemented in a mod. I suppose there is oil from the gun mod you could use...

We have carts that can literally act as teleporters over short distances. What do you mean by earth moving equipment, we got a shovel. It just sounds that you just want a quick fix.

8) Yes, a loot all button would be nice for chests. maybe even a deposit all button. However, if you cant loot all, or deposit all (due to your (or the chests) inventory space, you obviously wouldnt be able to.
9) Mmmmmmmmmmaybe... I havn't really formed an opinion on that yet, and I doubt I ever will. Bad looking traditional thing vs good looking new, but pointless thing... Hmmmm... (thats about the joints, next part is about hair and such) I dont know if you ever saw a thread called: THE BEST IDEA EVER. (which really contradicted itself, as it was the worst idea ever) It was about craftable mustaches, and many people hated it because of how useless it was, and the people who liked it liked it for the lulz. (jokes get old, a perfect example is the portal cake)
10) No. Make time to explore the caves and *gasp* work for what you want. Also, see #6.
Also, instead of many random, not that well thought out, ideas on one topic, think them all through more, and put them on seperate topics. I believe thats a rule of these forums.

10=robot minion to do all your work so you can be lazy in your real life and your virtual life
You summed up my list quite nicely Deaven. I usually read through the stickies to avoid this whole mess but I'm having an off day I guess.
1. Make combat harder or less annoying. Make it an integral part of the game instead of something you build a bed to avoid. If there are hordes or monsters guarding some great loot a shield would be necessary. Plus, having an entire set of armor with no shield feels like something is missing.
2. The sloped blocks may very well be impossible. I'm not familiar with how minecraft handles geometry. Is there one base cube model that everything is built with that is instantiated endlessly? I'm an Elder Scrolls modder mostly and it had an entire directory for all of its models.
3 and 4. Perhaps not worth the effort for most player but there will always be someone who wants things to look real(er).
5. Oil would be used for a few things; traps or fuel for non-torch lights. As for the chicken, that was just an example. You could forge some sort of gas detector or implement smaller bird that you can trap and keep around for any number of reasons. Whether it be a house decoration or a death preventer. I just like the idea of a few more hazards beyond what we have presently.
6 and 7. Perhaps it is too modern. It would definitely be something for a mod though.
8. It's something that I have been spoiled with by playing Elder Scrolls.
9. I like the charm that minecraft has with its simple animations but it will no doubt turn some people off of the game. I'm not saying make the entities into Gears of War demigods, I would just like my guy to have elbows. Maybe that's mod material too.
10. The autoharvester isn't so much a robot as a machine or even a minecart system that drives through dropped loot and automatically adds it to a storage cart then drops it off somewhere, ad infinitum (or at least until the fuel runs out). It would be nice to not have to babysit base operations. It gives the player the freedom to go exploring without worrying about loot drops vanishing.
