I always have an over abundance of seeds from my wheat farm. I think having seeds be edible and refilling 1/2 a hunger point would be a good way to give them another use.

Except the ease at which you could get seeds, like you have said, means that even at half a meat pop and nearly no saturation, they would still be OP for days.
Let's do some math, on average you get 2 wheat seeds per plant (Yes, I know there are higher and lower numbers here) one would go to replanting the wheat, the other one would be food. So from a mere 20 wheat plants I could fill my hunger bar, whereabouts 20 at least. And on average at late game I plant stacks of wheat, one of my current farms allows me to harvest over 3 1/2 stacks, but we'll round to 3 stacks and forty extra for counting.
(64x3)+40=232, which divided by twenty would be 11.6, so from my current farm, on wheat alone, I could fill my hunger bar over 11 and a half times, and if we count the wheat I could get, I would probably get another 20-30 fills, because bread is 3 meat pops if I'm not mistaken?
I'll emphasize on the bread here, we just figured out I'd get 232 seeds on average, which would be the same for wheat because you always get one, now 232 divided by 3 is 77, that's a lot of bread, but 77 times 3 is 271, which divided by ten is 23.1, twenty-three full refills.
And that, my friends, is only if I have wheat, I have all the other jazz as well, let's start with melons. (While I don't think you're suggesting we be able to eat the other seeds, it would make sense and tie into your idea, as pumpkin seeds are as edible as wheat seeds)
You can get between 1 and 8 melon slices from a melon, but we'll say five for math purposes. Now, I have two rows of pumpkins that are a little longer than ten blocks I think (Closer to 20) but again, for math, we'll say ten. Now, if I have two rows of ten I have twenty melons on those twenty blocks before I harvest, twenty melons dropping five melon slices, that's 100 slices, and 100 seeds. At half a meat pop that would be 50 full meat pops, which divided by ten is five, thus I could get five refills from an average ten long two row melon farm.
But what if I ate the melons? That would be a full meat pop, so 10 full refills.
Now onto the pumpkins, I have the same measurements for my pumpkins as my melons (Again closer to 20 but math purposes), and each pumpkin gives four seeds per fruit guaranteed, so my numbers are hardcore here, no guesstimates, no 'maybe you'd get less', this is facts.

So one extra seed from forty blocks is forty seeds, divide by two to be full meat pops, that is twenty. Two full refills.
Beetroots can be eaten for half a meat pop, so that's another two full refills from a bare minimum of one beetroot per plant.
But wait there's more! Beetroot soup, which also does three full meat pops I believe? So you need six beetroots per soup, so forty beetroots would be 6 soup, at 3 meatpops each that's 18 full meat pops, one full refill and 8 meat pops extra.
Now, lets add that all up, shall we?
23.1 refills on bread, 11.6 refills on wheat seeds, 5 refills from melon seeds, 10 refills from melon slices, 8 refills on pumpkin pies, 10 refills on pumpkin seeds, 2 refills from beetroots seeds, 2 from beetroots raw, and 1.8 refills from beetroot soup. Now, we obviously can't have both beetroots and soup, so maximizing to 6 soups at 1.8 and four extra beetroots at 1/2 each, we have 2 refills.
So, if you are eating melon seeds as opposed to slices the number would be 61.7.
Eating melon slices would be 66.7
From seeds alone is 28.6
So from my bare minimum, smaller than it really is, hypothetical farm, I could get between 61.7 and 66.7 refills. And only from your idea of eating seeds it is still 28.6, and almost half comes from your original idea of eating wheat seeds, 11.6 refills on wheat seeds.

I suppose I am being a bit unfair here, let me recap.
I'm saying about all seeds and all the seed crops, so here would be the true values wheat seeds v.s. all the products I can make with other crops that have seeds.
Wheat seed refills alone is 11.6, the amount I can get from crops and their products is 41.1, so wheat seeds would go into crops 3.5430345, or just 3.5 so for every one wheat seed refill there is 3.5 crop refills if my math is right? And while that's not a whole ton, but it's a lot for a bare minimum of wheat byproduct, especially because if this were added people probably have double chests full of wheat seed and could just have practically infinite food for working around their houses.
I still have no support, but I figured I'd be fair in my numbers.

"This gives seeds another use" doesn't mean much for an idea like this. Not when we have more than enough food in the game... And I don't see overabundance of seeds a good point for this. Eventually, you're gonna too much of something. If we didn't have a buttload of food in the game, I'd support this, but since we do, no support.

To me the reason for "no support" isn't so much that there is already lots of food in the game. It is more for ease of use. Think about it:
Left-click = break block in front of you. Right-click = use the item in your hand.
Ok, so, seed in hands, I right click. What happens? I should feed a chicken or I plant a famland.
Now, adding "I eat the seed", that makes for a conflicting usage of the right-click. Let's say "ok, if there is a chicken or farmland, then do this action, otherwise eat ther seed instead". At first glance that seems a reasonable "fix".
However, currently ANYTIME that I slightly miss my crosshair not-quite-placing-it-exactly over the chicklen or farmland, currently I simply keep my right-click held, and move my mouse a bit and voilà, the chicken is getting fed, my farmland is getting planted with a seed. So my positioning of my mouse over the chicken or farmland target, when I do the right-click, is VERY forgiving. I don't need to pinpoint exactly, nor to precisely match the pinpointing the instant I right-click. As soon as both conditions are met i.e. BEING rightclicking plus MOVING OVER the target, the action I want starts and there is no possible confusion.
Instead, suddenly I would start eating the seed instead. Then I would need to release my right-click then MAKE SURE I always place my mouse curser correctly and perfectly over the target, and then hit right-click again. The condition stops being "mouse over valid target anytime while right clicking, otherwise standby and nothing special happen until condition is met", but becomes "mouse over valid target at the very precise instant of right-clicking, otherwise start doing something completely different instead". It would not be "forgiving": it would be annoying.
So I am totally against giving an item two different right-click uses like that. Items with a right-click special function should NEVER be food, and vice-versa food items should not have any special other right-click usage.
IMHO, the original goal is "we amass tons of seeds, so some use for it is wanteds" stays 100% valid, tough.
I'd simply add a Seeds block.
Kind of like the Wheat block, made from 3x3 Wheat, you'd craft 3x3 Seeds to make 1 Seeds block.
Instead of creating 1 "storage" block for each seed type, I'd do it only for normal Seeds.
Why? Because this:
Melon Seeds & Pumpkin Seeds are obtained only by deliberate crafting, or by rare accidents
a la "ooops I broke the stem by mistake". Thus you never accumulate tons of those.
For Cocoa "Seeds" and all other crops, the seed is also the wanted crop itself,
so we don't accumulate too much of these by mistake either.
Even for Beetroot Seeds, the target crop is only food.
So again the amount of useless seeds shouldn't become astronomical.
Meanwhile, Wheat is vital for farming both cows and sheep farming, and even helps with horses too.
And if you want to make a non-negligible "tatch roof" build, then you'll need TONS of wheat.
So it is VERY easy to get tons of "useless" Seed items as a "by-product".
Thus, only the storage block for normal Seeds is really needed.
Making seeds a food item, is not really a real use for it, it is more like a failed attempt at '"getting rid of the excess".
Having a new block to play with, now that is a real use.
Even if you see that block as useless, someone else on the same server might
want TONS of that block for his own build, so it could at least be traded.
Maybe that Seeds block would only serve as a decorative block, and that could be considered sufficient to give all Seeds items another use.
However, there could be a special use:
Automatic chicken breeding.
Any chicken ready to breed and sufficiently near a Seed block would go to it, and fall into lovemode, with the block having say 50% odds of disappearing. So, player doesn't need to pinpoint tons of individual chickens. Much costlier than by hand feeding, yes (in this case, at 50% consumption rate, it would be 4.5 times costlier!), but also lots simpler and quicker too. Drop X blocks, in a farm with a sufficient number of chickens, to expect the same number of babies! Drop a TON of Seed blocks, and you can move away, and all of your chickens will breed, and then 5 minutes later will breed again without you doing anything more, and so on until the chickens have eaten all the Seeds blocks.
Could even make these Seeds block gravity affected (in which case they should automatically push chickens out of the way when they "fall").

Seeds are so abundant and easy to get that they wouldn't be suitable as food.
