I generally like the idea. Not so much for the nether, but what can I do... you can have water in a cauldron in the nether so...
Hydrating is a little much for me. I can see it maybe in the overworld.
Support! Sounds really cool! I would use this in tons of my builds for sure! But, maybe it would spawn in special lakes? And would items float to the top? But still, sounds soo cool!

It'd also be a cool nod towards real world physics if mobs were a little bit more buoyant in this substance too. Mobs and players would sink more slowly when sinking and rise up more quickly when swimming. Bonus points if sprinting players can run across the surface of it without sinking (or sinking even more slowly than when they were standing still). Basically making it Oobleck.
But going that direction might be a little too far outside the scope of what you're trying to accomplish here.
I like the fact we have fellow science nerds (maybe?) in the forums. This is not a term well known to many, because generally people don't care. Kudos for knowing what Oobleck was.
Also, since MC does like using terms that are what they are (like obsidian, etc.) I think you solved the shorter name problem too if this gets support. Not to mention, the name is MC all the way. Fits nicely. But to further my point, Oobleck wouldn't saturate in Hell. It would most likely turn it into a slime block... wait a minute here... that works You change it to that, in the nether only of course... and hydrate 2 blocks in overworld, I bump to 100% support.

You are right. I had forgotten about the conversion to 4 and only being 8 slimeballs.... sigh. Back to not supporting the nether process, so 93% support. It just made sense (not counting recipe)
It's interesting, but this can probably land as something completely different than just being a variation of water. I support the mechanics but not the name.

How about It can still be placed in the Nether, however, Tilled Dirt, itself, cannot be hydrated in the Nether?
This way, farming is super slow in the Nether. This block was not designed for Nether farming; it's just something I thought of on the side.
It would not spawn in special lakes. I don't see why it should. That would also make it too easy to get.
If items floated inside this block, simple item elevators could be made.

The whole point of this block is that it is water: It's suppose to be water. and behave, pretty much, like water.
Well, it could just prevent sinking in it when you have a high horizontal speed (sprinting or faster), and still break someone's fall if they aren't moving faster than that (only possible via Elytra and TNT cannon afaik).

I still like Oobleck. That's exactly what this would be. I mean with the only real difference in being slime vs cornstarch. The properties are still the same. Since we do not have corn (why I dont know) it is the only achievable way. Again, it even sounds Minecraft like.

Though I'd wouldn't mind if a theoretical block of Oobleck were to negate fall damage, slime blocks do the same if you let them bounce you. This would be halfway in between.
Water negates your fall damage and allows you to pass through it.
Slimeblocks negate your fall damage and bounce you (unless you hold shift).
Jelly Water could negate your fall damage and not let you pass through it (until after you've stopped or slowed down). Basically if you hit it above a certain threshold speed it resets your vertical velocity to zero and then lets you start sinking.
Alternately, you could go with Badprenup's thought and only apply that to horizontal speeds at sprinting or above.
Gelatinous Water behaves exactly like water, except:
- It doesn't generate flowing streams.
- It's not affected by gravity.
- It's carried in block form (Stacks up to 64)
- It must be mined (Best via Shovel) in order to be collected: It can't be picked up via Bucket.
- It can be placed by hand, without a Bucket.
- It's not affected by temperature: It won't freeze nor evaporate.
- It can't be soaked up by Sponge.
- Nothing Spawns in it.
- It, itself, doesn't spawn naturally.
- It can be crafted via crafting table with 1 Water Bucket sounded by 8 Slime Balls to yield 4 Gelatinous Water blocks.
- 1 Gelatinous Water block can be cooked via furnace to yield 2 Slime Balls.
- It only hydrates Tiled Dirt that is 2 blocks away from it, horizontally, instead of 4 blocks away from it, horizontally.
- Bottles can't be filled with water via right-clicking it.
- it's edges are outlined and is slightly harder to see through to further distinguish itself from regular water.
- It can be moved by pistons.
This is perfect for anyone who wants floating water blocks that they can carry around for any particular reason.
It can also hydrate Tiled Dirt in places such as the Nether, considering it can't evaporate.
If people want to create floating water in parkour maps, they no longer need to use "/commands" to do so.

Could have a lot of uses, and since it floats in mid-air and pushed by pistons it could make for interesting redstone contraptions.
