Right click is both the control to interact with blocks and also a do a shield block, bow drawback, eat food, etc. My idea is to have advanced options is the key binding section in the settings.
There is an option in the keybinding section called "Advanced Controls", and if checked yes, there is an option for block interact main hand interact (food eating, block placing, bow shooting, etc.), offhand interact (shield blocking, bow shooting, etc.), and also the key to place a block while looking at an interactable block, like a crafting table or chest.
The use for this is for when you try to eat food when looking at a chest and you accidentally open the chest instead, you could not eat if you were in a small house made of crafting tables.
I know a lot of things I said here are confusing, please let me know in the comments if you need me to explain something better.
I don't know if it works with food off the top of my head but sneaking and right clicking an interactable block will let you place blocks against it instead of use it. I would say expanding that to allow for eating (if not already in game) would make more sense.

I can't see anything wrong with giving people the chance to make controls easier for them, but it isn't very hard to just say, look at a chest to open it instead of eating food in your hand.

A little idea that could help to your suggestion:
The central button of mouse could be used for special utilities, while right button and left button are in use; or for alternate the use of blocks/items
(left-click+central-click for protect with the shield and eat, and left-click+right-click for protect with the shield and hit with the sword; for example).
The only problem is that not all the mouses have three buttons, but the central button could have an extra support utility, not be an essential utility.
I have never seen a mouse without a middle click, lol.
