My brother and I Have thought about the limits of the current difficulty system and came up with a conclusion: The Preset Difficulties Are Not Enough. We came up with a solution.
Within the pause menu, where the Difficulty switch normally is, is a button. When clicked a sub-menu will open (kind of like the recently implemented graphics menu) and the Difficulty sib-menu would contain the following switches:
:mob switch -four modes: all ; no ; no hostile mobs ; or no mobs in general
:health switch - 3 modes : normal ; peaceful-style regeneration ; or no damage
: Time toggle - 2 modes : normal ; or frozen
More could be added, and if you have an idea post it in the comments, but i think that these could really improve the game, because right now i feel that there are only two modes: survival and creative

One button might toggle whether or not hostile mobs (Mainly Zombies) can break blocks, like in zombie seige.
Anyways, not a bad idea!
I'll see if it makes sense later.
