Clams are a mob designed to fill up a part of the ocean while adding other new content and challenges. The Clam:
The Clam is reasonably rare spawn in Ocean and Deep ocean biomes. They only spawn in groups of one.
Clams have both an open and closed state, similar to Shulkers. They have exactly the same amount of health as Shulkers (30 points / 15 hearts,) and also have the same amount of damage resistance when closed. Their AI is also largely similar to that of the Shulker, as the clam will open and close at random intervals. Unlike Shulkers, Clams can move beyond the block they spawn on, but only very slowly. Clams cannot be pulled using a lead.
The main purpose of Clams is to obtain Pearls, which can be used for a variety of things. When the clam opens the pearl can be taken using a right-click. This presents the risk of drowning if the player waits too long for a clam to open. It is incredibly difficult to harvest a pearl without water breathing potions or an aqua affinity helmet. Clams Despawn and Respawn so the pearls do not reappear over time.
When killed, the clam drops a Clam Shell. The Clam Shell looks like a Clam, but is a block, not a mob, and otherwise functions like a Chest. Using a tripwire hook, a Trapped Clam Shell can be made, which snaps down on the player when opened, which damages and knocks back the player a few blocks. Unlike a regular trapped chest it does not emit a redstone signal. There are no double clam shells.
Using a Clownfish on a Clam with an open mouth, and no pearl, they can be "tamed." Clams that have been given a clownfish do not follow the player, but can be picked up, but they cannot last out of water for too long. Tamed clams do not despawn, and their pearls regenerate every 5-10 Minecraft days. (I understand that Clams eat Algae in real life, not fish.)
FYI: While this has some traits of an Oyster (Saltwater and Pearls,) some clams also have those traits, and Oysters can't move and have rough shells. The main reason I called this a Clam is it sounds better. This is sort of a Clamoyster I guess.
The Crypsis: The Crypsis (Or Malclive, I'm not certain which name is better) is semi-hostile a variant of the clam which has a 25% chance of spawning instead of the regular clam. Unlike regular clams they cannot be tamed, or move, and their pearls are not harvested in the same way.
When a player attempts to harvest a Crypsis, unaware that it isn't a regular clam, the otherwise Docile creature will go into attack mode.
The Crypsis "Head" will attempt to grab the player if they try to escape, but it cannot travel more than 8 blocks away from its "anchor," which appears at the spot the Crypsis spawned. When the head grabs the player, it goes into the closed state, so it gains damage resistance. The anchor has no damage resistance, and it is better to try and attack that instead. The anchor and the head are connected by a vine-like effect. The clam only deals damage (6 Damage / 3 Hearts) when it first bites the player, the rest of the damage is done through drowning, when the trapped player is slowly dragged back down to the anchor. The head can only travel 8 blocks or less from the anchor.
The Crypsis drops one pearl, the Clam Shell, and 1-2 Prismarine shards. It will drop more Prismarine shards if a Fortune sword is used.
FYI: In Ecology, Crypsis is name for the ability of an animal to avoid observation or detection from other animals.
The Pearl:
While this may be a good use for Pearls in Trading the early-mid game, once a Brewing stand is obtained, Pearls can be brewed into Potions of Haggling. Haggling potions give players 20% (Level 1) or 35% (Level 2) better trades. This means a trade for 20 wheat would instead give 24 wheat (Level 1) or 27 wheat (Level 2.) The Trading potion is colored Emerald green. It also will make trades worse if a splash potion of haggling is used on a villager.
Nine pearls can be crafted into a Pearl Block, which can be crafted back into nine pearls. It has the same properties as an Emerald block and can be used in beacons. Pearl blocks do not stick to Slime blocks or Sticky pistons due to the real life properties of Calcium Carbonate.
Pearls can be used to apply a Shell pattern to a banner.
It is very possible more uses for Pearls could be added.

I support. Full support. This is one of the best mob suggestions I have seen on this forum. Alot of detail, pictures, ect. I really love those textures. Like how the clam texture looks like prismarine. The pearls look beautiful. I just can't say everything I like about this suggestion.
Now this is a suggestion. If you clean the format up a bit and if this thread lasts for a while, you're looking at the Hall of Fame.

Wonder if there should be a ender variant of the clam that would produce ender pearls instead of regular pearls... possibly be neutral (like the crypsis)... might make my own suggestion on that if I get your permission mushroomsock. Could just feature your suggestion in mine saying I got the idea from you.
Let this be a lesson to those who don't know how to make a proper suggestion! I can definitely tell lots of thought and effort when into this, and I applaud you for that. Now, I like mostly everything, except maybe that thing about throwing the pearls. I think that it would make more sense if you had to craft a sort of eye, (maybe out of four prismarine shards and four prismarine crystals around the pearl?) sort of like eyes of ender.

I've never played a Mario game, so it's not at all based off that. It's a combination of the Megalodon clam, the Mimics from other games, and the Man Eaters from Terraria.

Ooh, suggestion! I can see the thought that went into this. It's balanced, fits reasonably well, and I just really like it in general. I don't really like the potion or think that pearls need that use. They have enough functionality without the potion, which is strange and unfitting. But the pearl blocks are pretty, the clams are cool, and I just like this suggestion in general.
My main issue with this is the Pearl. It just does too much. It seems to add a whole new group of Pearl-specific trades, is a potion ingredient, makes a Pearl Block, can show where exit portals are, and makes a clam shell pattern.
I don't much care for the trades or the exit portals. The trades just aren't detailed enough for me (you allude to emerald items but don't say what kinds and don't say the other gear) and introducing a second, easily farmable currency makes it seem like it would be easy to get equipment. You say they are somewhat rare (not very helpful, percentages or spawn rates would be helpful), but the ocean is large and devoid of life. They would probably spawn fairly often over a large area and enchanted gear or potions make for easy pickings. Then you just move them to a pool and farm endlessly.
The exit pearl just doesn't make sense to me. I get that you draw from Ender Pearls finding portals but that seems to be more the Ender thing rather than the Pearl thing. Plus the Ender Pearl is just used in the crafting recipe for that item. But the main issue is that End Portals are hidden, and you are going to be hard pressed to stumble across one by accident.
But if you can't find your way back to an exit portal, it is because you screwed up. You didn't place markers, you wandered off randomly, etc. It is never the game's fault you got lost. So I just don't feel it is necessary to give an item a use that makes little sense to fix a small problem that is always avoidable.
Other than that I love it.

Clam chest seems a bit weird IMO. maybe it drops 1-4 "Clamshells" which can be crafted as wood is in a chest recipe to make Clam Chests.

The pearl block is something rare akin to the Emerald block. It's not something that needs variants.

Your Clam looks too much like a cardboard box, to be honest.
I'd rather it look more something like this:
"Clam shells replace normal chests in Ocean Monuments"
There are no normal chests in Ocean Monuments, and I see no need for clam shell chests: We already have Chests.
It's actually very rare for a clam to house a pearl: I propose that we keep true to that.
I'm against taming Clams: Clams aren't loyal, and they don't eat fish. Might as well tame a rock?
I love your block and pearl models. There's something I find very beautiful about its mercy, faint rainbow-like appeal.
These get a solid 10 out of 10 from me.
I'm not very drawn toward the functionalities you've given the pearls.
If there was a fisherman type Villager, pearls would make a befitting trade requisite for them.
The potion makes no sense to me, and I'd rather trading to be not so easily exploited. We've got enough trading options as is, regardless.
For now, you get like, 30% of my support. I'd like to see this topic grow into something more unique.
