Scenario: Player1 wants to trade with Player2. Player1 gets within 5 blocks within Player2 and Player2 can accept with the command

GUI opens, contents from the other players' Trading box is the only thing that is visible to you and is dynamic, meaning it shows up in the box when the other player places it there. The trading box is 3x3 blocks. Once they are done, there can be buttons
to accept or deny the trade. Once done, the players' items are exchanged!
I much prefer the drop the item on the ground type of trading. It means the two people have to trust each other to trade. It also means trading isn't risk free. I think making trading with a GUI would be boring and much less interesting then the current drop the item on the ground trading.

But seriously, I've had enough thefts in servers and thought of this and thought it would be a brilliant idea. Dropping items always has that risk of others around you, especially idiots. If you guys want to go around stealing stuff, I suggest you rethink what you do. The others who find this as a safe alternative resource, then lets hope something similar is added to the game.
Like people have said, it adds the risk of being conned, or having your items stolen by a third person.
With this system added, it would remove all risk from trading, and makes it too safe. I don't steal from other people in SMP, but I like the feeling I get knowing that I could if I needed to, and that it is possible for my stuff to be stolen while trading.

You could always make a trade room with 2 iron doors, 3 levers and some redstone you know. Look it up on youtube. It's actually quite effective.
Make it a server pluggin/mod and no one will complain about it (implement it into the original server.exe stuff and let people chose to toggle it on/off when they create a server) , fixed

But seriously, I've had enough thefts in servers and thought of this and thought it would be a brilliant idea. Dropping items always has that risk of others around you, especially idiots. Wait a minute, suddenly people that steal stuff are idiots? I think the idiots are the people that are trading in plain sight of others. Trading by dropping right now actually builds more trust between players, when a trade is completed successfully. A trade with no risk, builds no trust.

Hide your chests
Don't tell people they are idiots, when your the one who can't do those simple things.

Stealing isn't greifing, it's and intelligent way to get ahead of people in a dog eat dog world. Maybe someone is scouting out and sees two people trade in the same spot every-time. He waits and runs in and steals the materials. This eliminates all form of trust needed between two people in trading. You know like how it works in real life? Trading IN A SURVIVAL GAME!!!! should always have some risk involved If there was no risk, it wouldn't build trust between players, AND there would be no possibility for your things to be stolen, which is very boring.
Two points in response to the responses to my comment:
1) The difference between this game and real-life is Penny Arcade's "Internet ****wad Theory." Yes, in real life someone could screw you out of a trade, in the same way that in real life people could set your house on fire or destroy it with axes if they wanted to. Notice how that doesn't happen as often in real life as it does in Minecraft? That's why most servers don't tolerate it. Because in computer games many people feel compelled to play the game merely to cause evil. This is why these games need anti-grief protection. If everyone played Minecraft in a realistic way (i.e. not being evil for the sake of evil), you'd have a better point.
2) Alright, point taken. You want a more "dog-eat-dog" style game. Can't you all at least support the option for a server to enable trade bars, for those of us who don't like to play with griefers? Is it really bad for a server to have more options at its disposal? I'm willing to wager most Minecraft players prefer no griefing to griefing.

A trading stand is made like this...
It's unlikely that people will have one on them at all times, so there would be a mix between old-fashioned trading, and new trading.
How to trade:
Both players would right click the same stand, and the GUI above would open. Trading commences as posted by the O.P.
