I have an idea, Ill try to keep it as straightforward as possible. This is my first suggestion so it might not be so good.
Taming
Slimes can be tamed with potatoes, but only during the new moon. This means you will probably have to name them when they spawn,(When the moon is more full) so they don't despawn before the new moon. Their tame chance is given by the formula 1 over (2 * slime size). Once tamed, they become passive.
Behavior
They behave more like horses than dogs or kittens. Size 1 slimes will follow you as long as they don't get too far away from their home location (Default is the place they were tamed) They will change their home locations if you have a potato in hand when they follow you. (This behavior is similar to farm animal's behavior) This means you could attract them into your house where they would follow you around but never get too far away from the house. (Basically a cute pet (Not as cute as kittens))
Size 2 slimes are very similar, except they can't travel in 2-block high areas. They don't follow you, but are more lethargic. They can pick up a single stack of dropped items,(one sword, up to 16 ender pearls...) which can be extracted using a lead.
Size 3+ slimes can pick up saddles which allows you to ride them.
Riding
Size 3+ slimes can be ridden, they move by bouncing with a Interface like horses. Charging up a jump like you can on a horse will cause the slime to leap, if a slime hits the ground too hard they convert the excess momentum into bounces. Slimes wouldn't act like a different horse, but like bouncy, controllable saddled pigs which are just for fun.
You would be able to ride and tame slimes bigger than size 3, which could be just for fun and would need to be spawned in. (Try a size 50 slime!)
That's my suggestion. Please comment, support, and add constructive suggestions.
This... is actually a really balanced idea and I love it. I like how they can only be tamed on full moons, I like how they don't attack things, I like how they can have set homes they bounce around in, and I would love bouncing my rideable slime off cliffs. Full Support

I actually said they can only be tamed on new moons, that way if you find a slime during a different moon phase you will have to name it or shove it in a nether portal to wait until its tamable.

Did you just support your own idea? That is kind of a given, since it is your idea lol.
Anyways I like the concept, although it seems weirdly complex for a mob that does less than a Wolf (with the exclusion of the larger Slime as it can be ridden). Having to wait anywhere from 20 minutes to 2.5 hours to tame a Slime seems like a huge pain, requiring a rare uncraftable item, a Nether Portal (and nobody being able to load those chunks while you wait), or having to put them in a hole and idle there for a long time for a pet that is only kind of useful.
Personally, I would make so instead of Potatoes, Slimes were tamed with Slimeballs and Slime Blocks, and would follow those instead. Potato just seems weird to me, and Slimeball seems to make more sense because Slimes are just large, living cubes of the stuff. I would also change it so that only small Slimes can be tamed, and only if no other Slimes are around (meaning the closer you get to Full Moon the harder it gets because of more Slimes spawning, but the closer to the New Moon the easier it gets, without actually limiting the times you can tame them to once every few hours). If you want a larger Slime you could give it Slime Blocks to increase the size, or you can just use Slimeballs to keep their HP up.
Finally, instead of the "home" system I would just make them like Wolves or Cats. Right click to follow, do it again to stay and set the home point. When they are at a home point they could bounce around that area, but not get too far from it. There is already a system in place that works well and it seems weird to use an entirely different system to set their home area.
Also, Slimes are way cuter than cats.

How dare you! there needs to be a rule about saying things are cuter than cats. It also says right below on your signature, 'Between work and play I moderate the Discussion section. Usually with my cat laying on my shoulders'
I didn't think slimes should be tamed with slimeballs because they are well, dead slimes. So I decided on potatoes because kittens don't care about them. (Leave the tasty food for kittens)
About the home system, this is basically the system used by farm animals. The problem I have with the normal system is that pets either follow you into dangerous places or sit down in one spot. This would make pets stay in one area, but still walk around and follow you a little.
The thing about taming them is that slimes are usually hostile, and if people could tame them anytime, people could run around with stacks of potatoes and tame all of them. (Slimes respawn unlike wolves) You can use a bed to skip some of the time also.
