Even in the altered form the thief isn't a good challenge, just annoying. Breaking glass, placing ladders, mining iron blocks, breaking redstone wire... All of these infringe on what makes both the Endermen and Creepers unique, their ability to alter their surroundings- and why only iron blocks? By that logic shouldn't they mine obsidian, diamond, and redstone blocks? Plus, why would they be able to avoid pressure plates or tripwires when no other mobs can?
Being able to open iron doors completely defeats the point of the item existing, which is increased security from mobs. People would want another new door to stop thieves, especially since thieves would leave doors open, letting mobs move into the player's house.
The ability to deconstruct items back to their base parts is flat out ridiculous- why would you give a mob such an ability? Especially when it would lead to net loss in the current formula you present? Or when it isn't something players can do despite numerous requests?
The 'cooperation' AI idea is another issue. Why would thieves work together when they are competing for the same limited resource? Becoming aggressive in groups of four or over is another flaw, as pack mentality in Minecraft is designed to require the player as the aggressor. Again, there is the issue of competing for the same resource. Also, what if the player is wearing diamond gear and has a diamond sword, all enchanted? Do they still attack despite it being suicide? What if the player has a pack of wolves with them?
You also have the "detection" phrased very vaguely. How does a thief 'detect' a player or chest? Do they have to have line of sight, unobscured by blocks? Or do they have an absurd magical sense for it? How do they tell what weapon a player is holding, let alone from the far end of the range you mentioned?
For Thief Dens- what counts as 'near' to trigger being followed? How many times out of a hundred of coming in range to trigger being followed, actually causes you to be followed? Does a thief physically follow you? If so, can you lose him by breaking line of site or killing him? Would doing either of these prevent other thieves from finding your house? If a thief doesn't physically follow you, isn't that overpowered, since it makes being robbed unavoidable?
Why are you 'screwed' if a thief den gangs up on you, when there is a chance you have enchanted diamond gear? Do they have a higher chance of spawning in equipped if they are in a Den? Why would a location meant to be wa secret be topped off with glass, which is noticeable? Why isn't there an entrance mentioned in the design of the den? What architectural designs can the den have? Would they have places they would be more likely to spawn?
What about how they interact with other mobs? Do zombies still attack them? Or witches? Do villagers run from them? Do iron golems attack them? Skeletons, creepers, spiders? What if you have tamed wolves guarding your chest? Why would they just let thieves wander in and loot their owner's house? What about Iron and Snow golems for that matter?
How would thieves work for people who can't have many chunks loaded at once, if they don't steal while the player is in range? Or what about on multiplayer servers, where they would essentially serve as partners to human griefers? Even if they weren't used as tools by griefers, all it would take is someone being in the same chunk as your house for you to be robbed by who know how many thieves while you are halfway across the map.

The point of the forum is to suggest ideas and refine them, if they are even worth refining. This one COULD be, but requires a lot more work before it could even be considered seriously.
These are single-player griefers. Isn't it hard enough to have creepers? If you want griefers, play factions. That'll be a real challenge: smart, deadly people who can steal ALL your stuff, destroy your base, and kill you repeatedly.

Also BTW, the only reason they grief is to get into your house.
You can easily defend your house with drawbridges, iron golems, piston doors, and tall walls to clear things up. And thieves will only spawn after 5 minecraft days, to nerf them.

There are 3 versions of villagers at the moment:
Zombie Villager
Villager
Witch
I think there should be a fourth one. Thieves!
Thieves would be villagers dressed in black attire.
The reason I had this idea was because the only thing your stuff is in danger from is players but there are no other players in singleplayer.
NO POINT IN DEFENDING CHESTS IS THERE?
If Minecraft add thieves, there would be a point.
Thief stats:
Base health:8 (4 Hearts)
Drops: 1 Iron Ingot, 8 Redstone, 1 Diamond Pickaxe & 3 Diamonds + What he's stolen.
Spawn: Rarely at night, Frequently at and around Gang dens, Occasionally around villages
Note: Thieves never spawn with armour or anything else! (Excludes diamond pickaxe used for mining.)
Actions:
If the Thief sees (line of sight) a player in melee weapon range, he will try to escape/run/hide.
If the Thief sees (line of sight) (in a 25 block radius) a bow aimed at him, he will attempt to hide.
If the Thief detects (no line of sight) a chest in a 50 block radius, he will loot it if possible.
If the Thief gets to the chest he will take:
Easy mode: 3 random items
Normal mode: 5 random items
Hard mode: 9 random items
If the thief detects glass in his way he will break it.
If the thief detects a door in the way he will open it.
If the thief detects (line of sight) a valuable block (Iron/Redstone/Diamond/Coal/Gold/Obsidian) he will slowly mine it.
If the thief steals armour he will put the best on.
If the thief gets a bow he will shoot at the player if he is out of danger. (Unlimited Plain Arrows but will use any he's picked up first! (WATCH OUT 1.9+ USERS!))
If the thief finds an iron door in the way he will pick the lock. (Lock picking will take a while, say a in real life minute?) (i.e. it will open and stay open until the redstone signal is reset or the door is replaced.)
If the thief gets a sword or tool he will turn it into whatever it's made from so he can carry more stuff. e.g. Iron Sword > 2 Iron Ingots, Wood Axe > 1 Wood Plank.
If the thief finds (line of sight) player loot he will pick it up.
If the thief finds (line of sight + 5 block range) redstone dust he will disable it. (So cover/hide it up/away!)
If the thief sees (line of sight) a pressure plate, he will avoid it unless it is in his way.
If 2 thieves are near each other they will work together by going opposite sides of the target chest.
If there are more than 4 thieves in a group they will attack you (with no weapons) if they think they are stronger (No Armour/weapon = 4 Thieves whereas Diamond armour might mean they need 16 thieves before attacking) instead of running away. (This means the same damage per hit as an empty-handed player.)(Note: 16 thieves is extremely unlikely to happen!)
Thieves will loot the following:
Dispensers
Chests
Droppers
Hoppers
Furnaces
Thief dens will be randomly generated underground structures (Y= >32) with a hole going to the surface (1x1 hole blocked by a glass block at the top.)
They will contain new chests called "Thief's Chest"(s) where thieves will deposit their loot.
If the player mines the thief chest, he will get a regular chest and the loot.
If the thieves run out of room, they will place another thief chest (In their den or where sunlight drops below 8) to fill up.
There will be 8 - 19 thieves in the thief den.
If you get near them they might follow you. (Line of sight only required at start. They will then follow you as long as you are in a 25 block radius. (50 block radius when you are running/sprinting.))(P.S. Thieves can run/sprint too.)
Strategies:
Thieves will steal when you are not home.
Den gangs will (you guessed it) gang up on you.
Thieves will most likely stay away when you are camping by your chests in your home.
Now your diamonds are in danger. YAY! (Sarcasm)
