The goal of Apocalypse mode to survive as long as possible, while having to deal with many threats. The first 3 days are mob-free, giving you an hour to prepare. After 10 days, it will stop, and all the mobs will increase their damage, speed, and health by 20%.

I read the rules, I know about the gamemodes rule, but this one is actually quite different Keep in mind that gamemode suggestions should also differ among each other. It is a hardcore game, and the world starts out completely peaceful for the first day. After that, mobs will start to spawn. Every day after that, mob spawn will increase by 25% (note that it adds 25%, so the third day will be 150%, fourth is 175%, etc.) Since when do percentages go beyond 100%? Was it to much trouble to modify the numbers so they fit into 100%?. Once day 10 is reached, it stops increasing.
At day 5, mobs will start to kill passive animals and trample crops, to sabotage the food supply.
At day 7, mobs will start to break through blocks to reach the player, even building staircases if they are underground. Mobs breaking through blocks is an annoying mechanic to have. If this was implemented, they would have the power to destroy half or an entire mountain. It would cause a lot of tedious work to repair, especially every night.
After day 10, all monster health, speed, and knockback will be increased by 25%.
At day 10. they will begin to loot chests. This is also mechanic some players would despise. Along with breaking blocks and looting chests, how else would players prevent their chests from being looted?
After day 15, they will always have buffs.
After day 18, creepers will place Primed TNT. This is even worse than other mobs breaking blocks to get to players.
This will be a challenging experience for players, and will test their PVP skills, AI Exploitation Skills, and redstone abilities. Once you are dead, it will tell you how many days you survived, and the stats of the mobs you were facing on the last day As much as it's willing to test skills, this goes beyond that. This causes mobs to get up close and personal aside from actually testing skills. The only 'skills' it teaches is to strengthen and mob-proof your shelter. I have no idea how Creepers placing TNT tests my PvP skills. And I'm not even sure if one is able to exploit these mechanics.

Mobs in Survival Mode aren't that easily fooled and will walk around lava, bottomless pits, or will even try to find shortcuts to get to players. No matter if theres a sign or not.

Before you say NO SUPPORT! because of the sheer annoyance and difficulty, you will get over 2 hours to prepare before mobs start placing blocks. Day 10 is over 3 hours of gameplay. This is supposed to be extremely rage-inducing and difficult, and it will even encourage players to avoid making gigantic stone castles.

I'm gonna come right out an say it blatantly. No support unless it is heavily modified. The main issue with this is just the pure annoyance that would come with this gamemode. It wouldn't even be difficult. It'd just be annoying.
I do however like the part about increasing spawn rates of the hostile mobs, limiting it at day 10. I find that interesting and it would definitely add a new mechanic to the game. The trampling of crops and murdering of animals would also add that challenge to the game. No longer can you simply just make a farm and not worry about it. The buffs, speed increases and knockback power-ups would also add to the gamemode's difficulty and would be very challenging to work around.

Percentages have long gone beyond 100%. You can have a dam filled at 120% of it's recommended capacity, meaning that it's full (100%) and has 20% more than it should actually be holding. Percentages over 100% would definitely be useful in this as instead of just working up to the regular spawn rates of Minecraft and you could theoretically work it so that you have 7 times the regular spawn rates of hostile mobs in the game.
Also, I removed the chest looting thing. That was unfair. This mode is like an extreme survival situation. You have to prepare for over 2 hours to make a mob-proof obsidian shelter.
At first it seemed like a good challenge. But I think it's passed from challenge to just an annoyance. I mean, killing animals, running over crops, even breaking blocks (to a point). I even like the primed TNT thing. But towering up is just dumb. This means that, other than obsidian, eventually, there will be literally nothing to save you. No way to build in the air, or make large castles, or good defenses. Eventually, they will get through, and you will die. I'm my opinion, a good challenge is something that's challenging to survive, but you can survive. Not just how long you can prolong your inevitable death.

I think they should only be able to break curtain blocks, like wood, cobblestone, dirt, and other easy-to-get materials. But thinks like stone, obsidian, maybe netherrack, they shouldn't be able to. Also, it should take them a while to get through a block.
For now, pretty much no support. I like the basic idea, but not the way you would have it implemented.

The AI won't read signs. The mobs think that the signs are full blocks and walk over them. They then fall into a pit of lava.

They still have the ability to do this, and the "only break blocks if they have to" sounds heavily implied to "Reaching the Player".
