I've been using this in my customized resource pack for over half a year I think, but is this along the lines of what you mean? I know it's not exactly what you specified, but it's a breed.
I've been using German Shepards for so long that I sometimes forget that dogs normally look like wolves. The original skin was taken from Nova Skin but I had nitpicked it to make it smoother. My sheep are black skinned like Hampshires and my pigs are Oreo Cookie marked like Saddlebacks. My avatar is a Partridge Plymouth Rock hen skin. The pigs and chickens are original skins.
If various dog breeds are wanted I could try looking for and or making examples.
First, I'm assuming all wolves stay white, but the tamed dogs are of different breeds? If not I suggest you do use this mechanic, as it fits in with the current ocelot/cat relationship.
Second, let's add a bit more than new skins. In real life, different dogs have different skills and attributes, as they're bred as working animals. I suggest we bring this into minecraft too. Each breed of dog could have varying attack strength, health and speed.
Tamed Wolf: The current "dog" in minecraft, has 20 health and attack strength 4
Rotweiler: Black and tan skin. 20 health, attack strength 6, but is 50% slower than tamed wolves.
Golden Retriever: Gold/yellow recolour of existing dogs. 25 health, attack strength & speed same as tamed wolves.
German Shepard: A blend of orange, black and tan, with a longer snout. 15 health, attack strength 5, 50% faster than tamed wolves.
Poodle: Smaller version of the tamed wolf, with a bobble on the end of it's tail. 10 health, attack strength 4, 100% faster than tamed wolves.
This will give the ability to use tactics when breeding a dog pack. Do you want strong slow tanks, reliable but average fighters, strong but vulnerable or a swarm? Breeders can pick and choose for PvP or hunting missions dependent on what they're hunting.
Acquiring new breeds:
On taming a wild wolf, the current tamed wolf will take it's place. When breeding a tamed wolf with another, there is an 80% chance that the pup will be a wolf, and 20% chance that one of the new breeds will be selected at random. This same mechanism applies for breeding other dog breeds; 80% of the time a pup of the same breed will be created, 20% of the time any pup (including tame wolf pup) will be generated.
This calculation is based on the breed of the "mother" of the breeding pair. Whilst there aren't any genders in-game, any newborn mob appears in the same position as one of the breeding pair. This is the dog used for calculations, so mixing breeds won't have any impact on outcome.
What do you think? I feel like this would add more into dogs without overhauling the game, it's essentially horse-breeding mechanics with the multiple distinct breeds set out by cats.
Crafty_Angyl, I really like that German Shepard, if you can texture other breeds to that quality with these descriptions OP can add it into the original suggestion to make a really solid idea

And again it's based on something I had already found on Nova Skin so most of the credit can't go to me. I just brushed up on it a little to my liking. I use Nova Skin for all my texture/skin art, but I can draw new skins from scratch on this body, like I did with the chicken in my avatar. That was detailed pixel by pixel with the pencil or whatever they call it now.
I still use Microsoft Paint on my computer instead of Photoshop so drawing pixel by pixel is just how I roll. Talk about ancient! Should have seen the first time I got my hands on CAD software. Imagine the clouds parting before a sunrise to an angels choir. Decades of drawing on Paint, then I discover the Snap function on CAD! I was giggling and bug eyed like the March Hare on Red Bull and it scared some people.
German Shepard works perfectly with the ears, tail and overall shape so it comes out very natural. For all of the other breeds mentioned though there would have to be a change in the mobs physical shape and I'll chat more about this in the next paragraph. For three breeds that work well with this shape I'd recommend the Shepard, Husky, and the current Wolf skin which many players would want available because that's become as iconic as grass blocks so I wouldn't mess with the tamed wolf skin. Just putting it down could give this topic negatives.
For the original yellow, brown, black idea that's good for Labradors and aside from the ears the shape works. Sort of like mules and horses. They'd only need to make new ears. Maybe on the sides of the head like the cows horns. The short tail on Rottweilers would probably be the easiest change if they don't give the dog a bulkier face, but the long hair on Golden Retrievers and the sheep like hunting vest on the Poodle would be bigger changes. That being said I'm supportive of changes to the physical shape. They've done it with horses and zombies, so why not dogs? The big Standard Poodle's are a hunting breed and that haircut everyone likes to laugh at was originally a life preserver meant to keep their head above water. I can't change the shape of a mob beyond erasing parts, but I can look for/ make skins that follow the theme for that breed.
As for using the current mechanic, why can't it be the same as with ocelots if that is used, but with the wolf skin just one of the skins?
And as for the variances in health, strength, and speed, changes in speed that make the dog Slower are interesting, but the dog has to keep up with the player. I know that the dog can spawn to your current location, but imagine the pain of running and getting attacked and your dog is just far enough that it's not spawning to your rescue when every second counts. I for one would wind up running around with Retrievers and Poodles and leaving the "slower dogs" in the house for home defense, which I guess could be really cool. Also I'm surprised that the slower dogs would have so much less health than the golden retriever. I'd think that a rottweiler especially would be a tank type to try to make up for being slower. Imagine what the skeletons would do to dogs with those stats. If the dog is slower it's gotta make every hit count and it's gotta be able to absorb some of that damage between hits or it's not really a fair fight. Maybe the Shepard has the same health as the Retriever and the Rottweiler has 30.

Oh boy, where to start... I see you are new to posting suggestions so let me help you out a bit.
1. It may seem to you like people are being mean to you by criticising your suggestions but this is actually
incorrect. It is our job as critics to point out the flaws of a suggestion to help improve the overall topic.
2. When posting suggestions try to be objective about it. Don't pan to the crowd in an overly exaggerated
fashion as this generally attracts negative attention. State facts and present your ideas in an orderly
fashion.
3. I really want to stress this point. Criticism is NOT hate whatsoever. If you are having troubles accepting
criticism more critics will be less likely to respond to further posts and suggestions. Thus even if you make
a great suggestion it may still fall on deaf ears because everyone will learn to avoid your topics.
4. Before making suggestions try to research potential ideas before hand. Ask yourself if it is truly needed.

With that bit out of the way I do like the idea of different skins for tamed wolves. It wouldn't impact the game

I know I'd love to see the examples! Cookiehook's suggestion is very well balanced and I'd definitely support if it is added
