I'm sure you are wondering, why would we ever need camels in minecraft? Well, because of the following points and ideas:
1) Empty Deserts
Deserts feel a bit empty, don't they? There frankly isn't that many passive mobs in the vast biome, besides occasional villages. None of the passive mobs in minecraft seem to be well fit for this particular biome, and what better to add to a desert than a camel? The innovation to adding a camel in minecraft however, is not solely devoted to ambient, environmental variety however.
2) Food Source
Getting food in a desert is by no means impossible. However, it is clearly much more of a challenge to gather grub in deserts than other biomes. Most other biomes have some kind of animal living in it, or at minimum grass to create farms. Deserts have villages [like other biomes], possibly temples [like jungles], and that seems to be it. Camels provide a relatively balanced way of obtaining food, as the options will not be nearly as numerable unlike other biomes, but are a last resort. There also can be incentive not to kill them. The food they drop: raw camel meat.
3) Riding
This is probably the option you were expecting to be alone. The ability to ride camels will be an upside [though notably not the only reason to implement them], as it makes logistical sense. Camels are ridden in real life, after all. And this is not necessarily susceptible to gameplay > realism scenarios, since it would frankly be more fun to ride a camel then pen them up and kill them for meat and leather.
There should be a differentiation between horses and camels, however, since preventing camels from being seen as just a cheap way to add variety is essential to being able to make this suggestion hold any weight. I believe on average camels should be slower than horses and variants. I also believe that they should have the ability to carry chests like mules or donkeys. The difference, though, is that this mob should be able to carry a double chest worth of items. The reasoning behind this is camels are known for carrying things across long distances and such. The camel, however as previously said, will be relatively slow. Not horrible I can't move in this thing slow, but slower. Their movement speed is around the speed of a player. Also, the health of the mob is 20. Same as a cow.
4) Leather Source
This in particular is more of an idea then reason to add camels, but the mob should drop leather. It is true that horses and cows already fulfill this, but it would make sense that camels would follow. Perhaps they instead drop camel leather, that acts exactly like rabbit hide.
5) Breeding/Taming
Camels would be tamed exactly like horses. Simple as that. On the subject of breeding, you should use cactus, or perhaps cactus green to breed the camels.
Now, lets talk about why people may like this idea:
1) Easier but balanced way of getting food in the desert.
2) Great way to transport large amounts of items on long voyages.
3) Adds depth to the desert biome.
4) Gives another option for ridable mobs.
Let's also discuss potential downsides with the idea:
1) Can be considered a copy of mules.
2) Variety doesn't mean good.
3) May be difficult to implement.
4) We have enough food as it is.
5) We have enough mobs as it is.
Solutions to the downsides:
1) Change the abilities between camels and mules, the capabilities [amount of storage] and attributes [speed, health, etc].
2) Add more depth to camels, besides just another mob.
3) This I cannot help. If it is fundamentally difficult to code in then that is a problem I cannot control.
4) Remove food drops from the camel and only drop leather, though adding another type of meat is more of a convenient thing from the camel then effort to incorporate more food.
5) Make the mob unique and interesting to help it stand out from this argument.

1) 20 health
2) Movespeed - 4.5 m/s [a bit faster than a player walking]
3) Breeding - Cactus Green
4) Chestspace: 2 double chests
5) Mob loot - Raw Camel Meat - Leather [potentially camel leather that acts like rabbit hide]

Camel: 4.5-8.5 meters per second
Horses/Donkeys/Mules: 5-14 mps

This is rather interesting, and I see how far you wanted to balance this suggestion by mentioning the existence of Mules, and to solve the problem with different variations in speed, health, etc. This is fleshed out really well, and could use a little more information such as the differences in speed, health, etc. with Mules and Donkeys. Other than that, the idea of this suggestion is interesting, and the structure of this suggestion is a really great effort.
I would really enjoy seeing camels in the game, it would give deserts more personality and would make a nice riding mob. Also, excellently written suggestion, it covers the details nicely.
