What I'm about to suggest is an overhaul of certain game features that nearly all Minecraft players will agree is NOT broken! And I agree! Why fix something that isn't broken? That's a good argument.
But I'm not suggesting we fix it because it's broken. I'm suggesting we overhaul it and make it something completely different and new. That being said, I would never want Vanilla Minecraft, as it exists in its current form or in its past versions, to be inaccessible to players. These are suggestions for Minecraft's future, not it's present. And they are suggested so as to further the game's development not to be commentary on it's current state.
Biome Habitats
This is actually not a new idea. Minecraft already does it to a small extent. Ocelots (or cats) have a Jungle Biome habitat. And that's one reason why I love both Ocelots and Jungle Biomes!
So, what if we expanded that to included all sorts of Biome-specific features? This could make possible the inclusion of a whole host of new animals without overloading the world with animal mobs. For example:
Deer - Plains, Forest Biome
(A huge food source which could potentially replace cows as the wild animal of choice)
Bear - Dark Forest Biome
(A rare find. Shy, and reclusive. A bear spawns only occasionally outside his cubby-hole where you might find berries!)
Boar - Forest, Pine Forest
(Another easily available food for hunting. Could replace pigs)
Pigs & Cows - Villages
(Since I've mentioned Deer and Boar as replacements let me say that I think Pigs and Cows make more sense as livestock animals rather than wild animals. They could spawn inside fenced areas in villages and be cared for and bred by the villagers.)
Lions/Tigers - Savannah Biome
(Great for sport hunting! Also can drop trophy items for bragging rights and/or enchanting!)
Snake - Dessert Biome
(Drops potions, meat)
Yeti - Snow, Ice Biomes
Gorilla - Jungle Temple Mob Boss
(Terrifying and very deadly! Jungle Temples are easy and predictable, but a Gorilla guard would make it FUN!!!!)
At any rate you get the idea. Each biome could become much more than just a different look than the others. They can be dynamic worlds onto themselves.
Underground Mobs vs. Aboveground Predators
I may be the only one in the world who thinks so, but I'll risk the flaming: I think the whole 'zombies and scary monsters at night' schtick is played out. I mean how many movies, books and t.v. shows feature this predictable theme? It's popular, for sure! But I think if it hasn't already past its prime then it will very soon!
I would support a game where hostile mobs such as zombies, spiders, creepers, etc. were only encountered in the dark depths of the world. This is where we find their individual spawners after all. I think this would create mystery to the underworld. Mining and caving would be activities requiring your full alert, lest you encounter the unexpected! Occasionally, Mobs that spawn near cave entrances might wander out under the sky but would burn off in the daylight as usual.
Whereas the Aboveground isn't completely safe, mind you. Lurking in most biomes are predator animals who are every bit as lethal as those underground mobs! I've mentioned a few above. These animal or predator mobs can be given AI which makes them passive unless provoked. Perhaps some predators are only hostile all the time?
Sound like an interesting idea. I would like to see more mob ideas before I support, so PARTIAL SUPPORT.

I like the idea of adding many animals to the game. There should be a whole Minecraft Animal Kingdom! But I'd like to see them organized, within reason, to particular Biome Habitats for the sake of common sense and realism.

The gorilla idea, to me, was fairly decent, considering that he made the valid point that jungle temples are predictable. What I didn't like, mob-wise, was the idea of yetis in Snow Biomes. You might as well have Bigfoot in Forest Biomes and Nessy in the Ocean.
But what I would like to see is more predators in the water, speaking of which. That would be kind of like Swordfish down in the Stronghold, but they would be everywhere. For example, piranhas could spawn in the waters of Jungle Biomes. They would attack everything in sight and are very hostile, but lack in hearts and give both raw fish and teeth when killed. The teeth could be used in potions or as arrowheads for, quite litteraly, razor-sharp accuracy. A more neutral idea is the shark, who give five raw fish when killed but spawn in groups. They are friendly when you have all hearts still, but start attacking when you lose a few.

I thought about it and you're right on the gorilla thing: Minecraft is not a zoo. A stone golem is a good idea, except that doesn't really fit in with the whole jungle idea.

The bones of my suggestion center more on the habitat of Minecraft Animals and not as much on the animals themselves. There have been and will likely continue to be suggestions for more diverse animals to be included in the game; I usually support all of them unless they are too weird.
That said, allow me to throw some light and detail into what I've already mentioned and add to it:
Deer - Plains, Forest, other Biomes.
Deer are known nearly universally as wild game. In game, they might spawn plentifully in groups only in Plains, Forest or other Biomes but will migrate to other biomes such as rivers for a drink. They would be very cautious and not at all trusting the way cows are. But hunting them wouldn't be much more difficult than hunting cows. Drops can include the usual steak, leather skins. Perhaps some way to craft or cook jerky. (Yum.) Also, I like the idea of bone drops that can be specifically used in tool crafting. I wanted to mention the inclusion of a Hunting Knife item idea that could be used to harvest animals with greater drop efficiency than sword but I'm not fully on board with it myself!
Boar -All forest biomes.
Boars are the same as pigs, only aggressive if you attack. They shouldn't be difficult to kill, so not many hearts. They should have the same healthy spawn rate as pigs currently do, making them an ideal source of food, along with deer. Drops include pork and/or rinds.
Pigs & Cows -Villages and some biomes.
Pigs and cows are very much iconic animal mobs to Minecraft. I cannot imagine the game without them. In fact, I wouldn't want to play Minecraft without my dear pigs and cows!!! They are crucial to the gameplay experience. However, it simply doesn't make sense to me that they roam the overworld as they currently do. When I see pigs and cows IRL, they are always behind some fenced enclosure as livestock. They aren't wild, free range animals. It makes much more sense to have deer and wild boar roaming the open wilderness than cows and pigs. Therefore, with the inclusion of deer and boar - equal in their value and availability to cows and pigs - then I would suggest putting cows and pigs into villages to be kept, cared for and bred by villagers. They could perhaps be seen outside villages occasionally, but that might be the exception rather than the rule.
Bear -Dark Forests
This big guy would have to be rare or else his presence would alter the game too much. A bear should be a ferocious predator when provoked. Nearly unsurvivable under normal circumstances. Would absolutely require armor and arrows. (maybe spears??) I love the notion of a predator lurking in the forest, though! It would take my survival game up a notch, to be sure! Bears drop leather, teeth, meat, and other items. Berries can be found in their cubbies. Normally passive until provoked. Provoking would involve being within a certain number of blocks, which might not be a fixed number to make it more interesting!
Lions/Tigers -Savannah Biome only.
Another predator to look out for. They would spawn in groups of 4 or 5, usually around water holes in the Savannah biome. They should always be aggressive. But hunting them should be a matter of sport! I can imagine their AI would make them retreat from the Player's presence a random number of times. Afterward, they would attack, as a pride, with relentlessness. Very difficult to kill, even with arrows. This makes it sporting. But bragging rights for sure if you bag one! Drops could include a skin which can be hanged as a trophy! Perhaps teeth that can be used in crafting/enchanting. It's a game, so I don't want to touch off any debate on the ethics of this idea. =)
Dessert Animals
Someone commented on snake drops as poison. Loved the idea! Ideas for dessert animals are snakes, lizards, or perhaps fictitious animals. At any rate, their presence should be slight and not overwhelming. Desserts are places where many a player have starved to death and thats the way it should be!

Gorilla - Jungle Biome
Surprised at the interest in this particular idea! The thing I love about the Jungle Biome is it's density. But its woefully under populated with animals! A jungle should be crawling with life! Birds, insects, monkeys, snakes, fish, you name it! I'm on board with all of those and more as long as their populations are balanced and reasonable. On the matter of Gorillas specifically: whats more terrifying than an impossibly large, impressively agile beast who's excruciating scream makes blood boil and who guards what is arguably the second most valuable temple in the Minecraft game? Who else better to guard that achievement? Monkeys? I would love monkeys but they could easily become annoying if not done carefully. I think a Gorilla Mob Boss would be the ultimate overworld hostile mob. As lethal as the dragon! "Welcome to the Jungle baby, you gonna die!"
Birds -All biomes with trees
Another reliable food source and source for eggs.
So again, I'm on board, obviously, with more diverse animal life. But my real suggestion in the habitat of these animals.

I hadn't thought of zombie sieges! I do like a good siege! I'm not sure how, but I wouldn't want sieges to be removed simply because zombies spawn primarily underground. Perhaps there is way to have both?

Again, my suggestion this: Rather than overworld animals spawning in whatever general area a Player is in, have them spawn only in certain biomes which would be thought of as their Habitat Biome. I've only provided a few examples of animals to show that Habitats would add to the dynamic feel of each individual biome, and as a result, the world as a whole.
Each biome should be a world onto itself! Complete with it's own plant and animal life and experience.
Fixing it this way would facilitate the inclusion of many new animal/plant varieties without overwhelming the world with random animals of every kind.

I believe the Animal Kingdom within Minecraft should fit in this balance in a more realistic manner. Doing so opens a door to potential and possibility and inspires the imagination!

More animals do sound fun, personally I favor birds. You have a good starting point but try to flesh these mobs out a bit more.
What are their benefits?
What are their downfalls aside from aggression?
How often would each spawn?
Would weather impact them at all? like a lion sent into a frenzy due to lightning.
What kind of damage do they do? What do they drop?
How many hearts do they have?
Can they be bred and with what?
Would animals from one biome i.e. deer encounter predators in another i.e. lion?
as for the regular hostile mobs being restricted to the depths of caves, no support for this bit. I personally don't mind
having them around to beat up.
As for cows and pigs becoming exclusive to villages no support. Even if there were 100s of mobs I'd still want to see
these animals roaming freely
almost forgot. The snake mob dropping potions seems a bit OP considering witches can too. Instead may I suggest
that they drop poisonous glands that can be added to arrows for a poison effect that would be a tick effect instead
of potion effect.

Ok so we got a few descriptions and adds that I sounds good so far. how much damage are we talking with lions and gorilla
guards? and what is their health? You mentioned the gorilla would be like the dragon does that mean it would have
a life bar as well? King kong would be a fun name but try for something original like say Darwin lol.
Also you mentioned birds. I would love to see this be expanded on. Being biome related, that should give a few ideas like
these perhaps
Mountain- Eagles and hawks
Jungle- parrots, tucans etc.
birch forest- cardinals
regular forests- pidgeons, blue jays and robins
desert- buzzards, voltures and crows
these are just to name a few. Hope it helps.
