So, something that occured to me is that there are really only 2 mythical biomes in Minecraft: Ice Plains Spikes and the Mushroom Island. These two seem very distant from natural things, and are very rare. And for that reason, I consider them parallels. That led me to think of this: There is a mob exclusive to the Mushroom Island, while the Ice Plains Spikes gets nothing. So I thought up an IPS-exclusive mob. Here we go!
The Boarealis is a variant on the Pig, with translucent, color changing skin (like when you name a sheep Jeb) and two ivory tusks. It also grows a coat of snow on its back, which you can shear off of it to get 1-3 Snowballs. It will regrow its coat by eating Snow layers. It has the same stats as a Pig, with the same ability to ride it. However, when riding it and using a Carrot on a Stick, it moves about 3 times faster than the normal Pig. This can make for extremely fast travel on player-made paths, but it isn't very useful on normal terrain due to the sheer speed. Also, it cannot jump more than 1 block high.
It drops 0-2 Raw Porkchops and 0-2 Prisms. Prisms can be used as rainbow dye, creating a rainbow gradient (does not change colors) on wool, leather armor, wolf collars, clay, banners, glass and fireworks (creates several multicolored particles). This also means that you can dye Leather Armor with Prisms and then another dye to make gradient armor of other colors. Crafting 3 Prisms with the 6 main color dyes (Red, Orange, Yellow, Green, Lapis, Purple) will make 3 Superprisms, which look like Prisms, but with an Enchanted-style glow. Superprisms will make things change color as "Multicolored X". This cannot be applied to Sheep, but naming a sheep "jeb_" will now make it produce multicolored wool.

Other than the excellent pun, I don't see why to make it a pig. A Rainbow Sheep makes more sense as sheep are already associated with dye. You could make it drop rainbow wool when sheared too.

It's mostly just a rainbow pig, it's cool but not much use from it.
I think it would be cool if it was Hostile to the player, but could be tamed by feeding it something. It's attacks could be like charge, pounce, and strike. Charging would be where it runs at you, and if it hits it does like 5 hearts. Pounce would be it jumping at you and doing 2 and a half hearts of damage, and strike would do 3 hearts.
When it's tamed, it could be fed a Nether Star and then grow wings and be able to fly. Then you could saddle it and control its flight with a Golden Carrot on a stick :D.

the whole rainbow effect doesn't appeal much to me, I love rainbows as much as the next guy but it would be very out of place, especially in an ice biome. the rainbow sheep thing was mostly just an easter egg, nothing serious. I think a large, blue-white yeti-like boar would be more appropriate that (potentially) drops some sort of food source along with porkchops (or something that can be made into a food source, like the mushrooms from a mooshroom)

edit: 2.5% chance to drop a tuck is very small, I'd go for about 20-25%

Haha, puns... Ok, I like the idea reasonably, but I dislike giving the creature a special ingredient drop. The mooshrooms don't drop a special mushroom or anything.
I'd say that the Boarealis acts like a normal pig, but also has a chance to drop a random color wool. So it's sort of a sheep/pig combo that is fun to get, but not essential.
I've already given you support in my head for that excellent name pun. I like that.
AS for the idea itself; you're very close to creating an excellent idea, but this mob needs something that's truly helpful for the Player, making it worth tracking it down. Partial sup-boar-t

Just had an idea. How about the Boarealis would be able to "glide" above the ground when ridden? It can only glide for a short time (like, 3 seconds), after which it would fall down and need to recharge for a short time.

If you were to be able to hover, it would need to be balanced. I do like the haste potion, but what if instead it made a resistance potion, since ivory, which most tusks are made of, is a fairly strong material. Just ideas

I do have a small issue however. It provides nothing particularly important or useful to the player. That doesn't seem to deter my support, since it's still unique and interesting.
