This isn't a very long read. If you would comment, I would appreciate it. If you are confused about a certain idea I have provided information about each one. Note: I have gone into extensive detail on the diamond producer in reply posts. If you just scroll down you will find lots more insight on how I based my reasoning on its inclusion.

I'm sure some obscure person has suggested one or more of these ideas in previous threads, but probably not recently and I wanted to include my opinion in one thread rather than hunting down individual threads and dividng it. I more than skimmed the already suggested thread for my ideas and generally I did not notice a thread devoted to a singular idea.
I.
The first thing I would like to see is a rope bridge. It would just play into the minecraft survival scenario perfectly. If you have a dangerous gap to cross, why not make it perfect with an equally dangerous looking bridge? Sway effects would add realism.
Any kind of bridge would do really. I just think the rope bridge would be the most natural looking and the most practical. It would be a dream for crafters as well to have these things artistically placed in their villages.
I have given some thought to it's construction. It would need rope which I''m aware has been suggested countless times before. (I want hanging rope ladders too.) I'm not sure how rope could be made in the game, but it could be done with cotton or wool.
Maybe this would create rope.
(People have suggested string, but I think that string is a bit to hard to get without a cotton plant to make rope useful in anyway.)
Anyways once rope is in hand, my formula for a bridge would be this. (sticks would be rope)
It would produce 3 pieces of rope bridge.
Attributes:
Flammable
Reacts when stepped on
Wind effects? (Optional)
Can place minetrack on it (Maybe?)
Placing rope bridges side by side will create a larger one by removing the inner ropes. (Maybe? ) Update
I think the best method for placing a rope bridge is a gap underneath and an available space above the gap if you want it to hang down. Otherwise there will be a block detector that will tell the game to place a flush birdge piece or a starter post. Unless you did some Minecraft trickery to get it to fit within 2 blocks, it would require a 3 block spread across with the current minecraft code.
Sticks are fence posts, and the slab is a platform
If there isn't space to do this it wont let you place the bridge piece there. Simple. The new fence attachment code can be used to attach rope to fences. I could explain further, but I don't need to.
II.
My next most wanted idea would be a cushion. I want this because i'm tired of taking damage when I'm falling off things. A cushion would absorb damage allowing you to fall from higher distances without getting hurt. I would say you could fall from 6 blocks up and not take damage.
A cushion can be made from four pieces of wool. The wool needs to be the same color.
Not only would this absorb fall damage, it would add one more personal touch to a home. The variety of colors would greatly diversify how you can decorate a home. (On a side note, there should be a cushioning effect to snow as well)
Okay people this is a decorative item intended to have an alternate purpose of absorbing damage. Stop acting like its sole purpose is absorbing damage. It is not intended for you to surround your house in these things. It is there for when you don't want to waste your wood making a ladder or need a quick way down somewhere. It would be another good use for wool, and green is not the only color. I want a cushion for every color of wool. It doesn't even need a "cushioning" effect, I would still want it if it was just decorative, but this would be following the stagnant Minecraft mentality of everything must have one purpose and one purpose only.
Update:
This is still needed... It's a decoration with a purpose!
III.
My third suggestion would be stronger boats. Seriously the boats break so easily that they can't take one block falls sometimes. I don't think there needs to be a new boat type persay, but maybe a strengthening oil or maybe applying iron supports afterward to add iron bands that go around the boat for added support.
Maybe it could be like this. The logtop is the boat.
or maybe an iron coating
or maybe even using logs instead of planks to create a stronger boat.
Update:
Still needed IMO. Minecraft shouldn't attempt to restrict us from doing things such as boat rides. I understand if you fall onto a block with a boat or the current slams you into something, but if you just rub up against something and your boat breaks there's definitely a problem.
IV.
My fourth idea would be quite interesting as a new useful item. I thought of a diamond generator that creates diamond from coal. (I know it's been suggested before, but I have put a lot of thought into its creation.)
Before you scoff this idea off as too convenient, hear me out. It's construction would take 8 gold blocks placed around a red stone dust.
(gold ingots are the gold blocks. mushroom is a red stone dust)
I would imagine the design to look like a gold furnace. How it would work is like a normal furnace and it could double as one. However unlike a regular furnace, you can smelt coal with this one, but only with a lava bucket as fuel. To make it more acceptible, the smelt rate for a diamond would be long and only a limited amount would be allowed.
Update: If one diamond took an entire lava bucket to make, lasting 1000 seconds (the duration of the lava bucket as fuel), it would take 16.6 minutes per diamond. 30 diamonds would take 500 minutes or 8 and a 1/2 hours to smelt and that is considering that you added a new lava bucket every 16.6 minutes. It would also take 30 lavabuckets.
Edit: This idea is perhaps the best case scenario for such an item. Instead of creating new properties for smelting, I just used an existing one (lava bucket) and used the entire life of it. Anything that deviates from the game to produce diamonds would be a more imbalanced idea and makes less sense in general. (Oh and it seems with each patch, diamonds are becoming rarer and rarer. What if it becomes a time where 3 diamond blocks is about as many as you're going to find within a 2000 block area? Would you be more willing to go for a producer if diamonds became unbearably scarse that you had to decide whether to build with them or use them for tools/armor?
Update:
It's controversial. But really would it not fit in considering all the magic things they added into the game. Perhaps crystal is smelted instead idk. It's an open ended idea that presents a feasible way to include it.
V.
Fifth idea is a new block. I want a redstone block that is created by filling all 9 crafting squares with redstone.
By doing this, we would have a nice looking block the likes of iron, gold,or diamond blocks, only red. I know there is a deep red wool, but it doesn't look the same as an iron block would. It's like saying white wool and an iron block are the same thing.
I'm not sure how it would affect red stone related items. I think it could have the same properties of a redstone torch only the entire block lights up. I think that would be really cool to see glowing red blocks.
(This is a possible solution for a block that you can turn the light on/off on with redstone. Combine it with dye and you got different colored lights)
VI.
Sixth idea: Some way to attain ice blocks for building use. Someone's ice fortress wouldn't be complete without ice and being unable to harvest such a beautiful thing bothers me. You can harvest snow, why not ice? It wouldn't be hard to create ice, logically speaking.
I think there would be two ideal ways of making ice. 1. Creating ice by combining 4 snow blocks.
2. Having ice drop ice shards when you break ice and the creation of ice blocks could be like making clay blocks with clay pieces or making glowstone from glowstone dust.
Creating Ice from snow blocks

[] []
[] [] = two ice blocks.
Creating ice from shards
(glass represents shards)

Attributes:
Normal ice block attribute.
When replacing one block deep of water, surrounding one block deep water is converted to ice block. Basically the same thing that happens when water is poured over lava.
-Adding ice with other things could craft some very interesting items as well.
I want these things so to further the diversification in minecraft. I have no life or death defense for this inclusion, because it's simply to show off and you would have a door or fence to go with your gold or diamond entryway. (Also maybe reusable gold pressure plates) (Note the idea for gold pressure plates was based on the notion that you couldn't retrieve pressure plates. I was misinformed. I still support making stone pressure plates non retrievable and making gold the only recoverable plates except for maybe wood. My reasoning being that anything stone doesn't usually hold up too well after being broken.)
VIII.
Eighth idea: (Probably mentioned already) Latches for minecarts so they don't get away from the powered minecart during hills. It's just more realistic that way. (As people have mentioned this idea was intended to be non craftable. It would be a property that minecarts naturally have that would bind them together. The only way to unlatch them would be to break one of the Minecarts.)
Update: I think that minecrafts should have natural latches, but you can choose to latch them by right clicking between two Minecarts. Unlatch them the same way.
IX.
Ninth idea: (I didn't really check the already suggested thread for food items) My friend suggested there be steak that cows may drop. I think it's ridiculous that only one mob drops something that restores your health. Notch needs to add more health items period.
Cookies are not health items that Minecraft needs. We need things that don't require wheat to make. We need more item drops. He could make the food drops rare and it would still make me happy to have them included in the game. It doesn't have to be steak, but it should be something. (Oh and raw steak > cooked steak)
I welcome any opinions.

Currently in the process of digging a 20x20 quarry. Wish me luck.
Current depth : 24 blocks from starting layer.
Total blocks mined : 9600 (Approximately)
I'm not digging two blocks around every building i make and make two blocks high water around it. ._. Cushions would be more convenient and would look nicer in my house.
BTW responses so far have been lacking. I want some real insight rather than cushions would be pointless because you can use hard to get out of water instead.
Gah! What is wrong with the Minecraft community? My suggestion thread gets buried by 30 idea threads that are either never going to work, <insert new mob here>, <insert item that has no real purpose to be in the game>, or completely throws the purpose of Minecraft out the window (I'm looking at you Spacecraft, gun threads, and items that take 6x6 crafting tables to make)
I'm trying to present realistic small scale ideas that Notch could easily add into the game. He's not going to ever take a new enemy mob idea and he certainly doesn't have the time to read a huge wall of text going into every little detail of an idea. The real golden ideas are the ones meant to enhance the Minecraft experience, not change it and I took that ideal when presenting these ideas. I think my thoughts deserve more attention than this.
I really want opinions on which ideas have the most potential for inclusion and if I have to make 10 different threads to get it, I will. I hope it doesn't come down to that.
A Diamond Maker seems overpowered, no matter how difficult it is to make or use. Just think: Unlimited diamonds... From coal.
Granted, it's sorta intuitive, but coal is really easy to find.
You should probably have to use a stack of coal, if you want some more balance, and producing a single diamond will consume the lava bucket outright. I'd also add a "cooldown" to the machine, that wouldn't allow you to use it for at least a week.

Egads..this is World of Warcraft meets Battlefield 1942 in a dark alley with way too much to drink and no discarded mattress nearby.
I had not given those specifics, because it could be done so many different ways. It could take the entire lifespan of a lavabucket to produce one diamond from 1 coal. 1000 seconds is a little over 16 1/2 minutes per diamond and you have to be there to put a new lava bucket in.
If you replaced the lava fuel perfectly, you wouldn't get 12 diamonds in a 3 hour time space of feeding it. I think that is more than fair considering that lava spawns are finite and 30 diamonds equals 30 lava buckets. That's about full diamond armor. That equates to 500 minutes to smelt!!!! That's 8 and a half hours to give 30 diamonds, feeding it a lava bucket every 16.6 minutes. Adding a cooldown period of 5 and then it will need so many minutes to cool down, then that 8 hours would need to be stretched across days.
I didn't think of that idea as an easy way to get diamonds. It actually came to mind randomly as an excuse why me and my friend had 300 diamonds in our possesion in one SMP we played on. It's really would be a cool use for gold, another use for lava, and a good purpose to utilize the smelt rate for lava. Plus a gold furnace would be so awesome. I would love to have one even if its just a normal furnace.
Really in the long run such a thing would be needed. A year from now the SMP server I play on will be near exhausted of resources. We would have to go very far distances to find new resources. A way to produce certain materials would help long running SMP servers handle new player loads without resetting their servers.

Rope bridges would be even better if you could shoot them across gaps some how. Like in that one book.... I can't remember what it was called...
I don't like the diamond generator, I think diamonds should only be attained by mining.
I voted bridges, cushions, ice, and redstone blocks.
Granted, it's sorta intuitive, but coal is really easy to find.
