I think the day and night cycle in Minecraft is really great, but there's always room for improvement.

RED MOONS

BLUE MOONS
:Have a random chance of appearing every night
:Add a pretty blue tint to the moon and and a slight tint to shadows

:25% increase in tree growth and colored sheep spawns

For added realism, what about a harvest moon? Back in the day, farmers used to love it when the moon was bright enough to tend to their field by, and called moons of that brightness "harvest moons." As for their in-game effects, aside from producing more light, I have no clue.
This may require another thread entirely, but I'd also like to see a moon-phase system, perhaps with repercussions in accordance with the new, quarter, and full phases. Red (or "blood," as I often call them), blue, and harvest moons would only occur on full-phase nights.
