Currently it's too easy to get a full set of iron armor, which offers excellent protection. I propose making iron armor count as heavy armor and offer some penalties, which gives more purpose for leather armor or other light armor types:
Heavy armor would reduce your movement speed by 20% and increase hunger depletion from any movement by 25%. Light armor has no penalties.
Existing armors that count as heavy: iron, gold, diamond
Existing armors that count as light: leather, chain
In addition to this, I would suggest adding a few new armor types. Firstly, wood armor, a cheap heavy armor that protects a bit more than leather and offers defense in the early game if you're willing to accept the penalty for it. Secondly, studded leather armor of three types: iron, gold, and diamond. The studded varieties would use mixed leather and the other material in crafting and would have defense and durability between leather and the full plate of that material, but would count as light armor.
Studded armor would be created first by combining two leather with one of the given material to make three studded armor units which can be used for crafting. For instance, combine two leather and one diamond for three diamond studded units. Then just place these units on the crafting table the normal way to make them into studded armor. Any leftover units can be used for repairs later, but a full set of armor takes 24 units, which is divisible by 3.

I actually like this, but feel that the hunger loss rate increases by a bit too much, as it already goes down kinda fast. Also, what do you mean by damage reduction? Damage from melee attacks, or durability of the armor? Or something else?

The armor's natural reduction to incoming damage from sources that are reduced by armor. For instance, a full suit of iron armor grants 60% damage reduction, or 15/20 armor units. Divide the damage reduction on any suit by 4 and you have the number of armor units.
So in my proposal, diamond-studded armor has the same damage reduction as iron plate armor, a little more durability, and no movement or hunger penalty. Compared to diamond plate armor, it is cheaper considering number of diamonds vs durability, but more expensive to enchant and maintain because it has lower durability.

There's no reason to make the lower armor types more useful. Although the game is currently easy, giving inconveniences to the player directly is not how to deal with that. And you honestly don't need to fix dificulty anyway; this is a game about mining, crafting, and building. Survival is secondary to these.
