Of course the aged blocks can easily be reverted to the original form by using a new kind of item like a hammer to wooden blocks and a special liquid to remove moss for stone blocks. And the probability of aging start extremely low and slightly increase at every new ingame day (like occuring after more than 100 ingame days, meaning it's not that common).
To prevent it being annoying for some players, this could just be an option that can be turned off at anytime.
"It can be optional" is not a valid excuse. I'd suggest reading this (under "excuses you shouldn't use").
While cool in a sort of abstract way, it's not really something I'd want to play with. I worked hard to make my structures look a certain way; I don't want to have to maintain it. That would just be a chore.

While I can appreciate the realism side of it, it could easily be a source of lag. Try building a proof of concept mod, to see how well people actually respond to it being in their game, as well as fine-tuning and polishing the idea. I could easily see this being on worlds with Enviromine, to be honest. Where buildings actually age and crumble, and could even be used to simulate erosion. But only if it's done right.
If you ever need to put "it can be disabled" in a post, I can pretty much guarantee it will not be accepted. As it should be something most people can agree on.

Please note, if I deny a suggestion because it is already possible, then I mean it is already possible withing 10 command blocks (That do not spawn other command blocks) or up to 5 creations (Command blocks that spawn other command blocks) to make your suggestion.

If you want aged buildings, you can always build one yourself (of course, having some access to more broken looking wood planks would be nice).
For player who don't want aged looking building, this is a nuisance.
It would make structures look bad, and would probably cause lag.

Would cause lag, and would just be annoying. I have no idea why anyone would want their buildings or their whole world to be tainted by this.
