Now that we have new stone types (Andesite, Diorite, and Granite) it may be interesting to revisit how lava makes stone when touched by water. Maybe it could be determined by what cardinal direction it's contacted from. Example: If lava is contacted on it's North side by water it makes Diorite. These should probably not start out polished.
I really love the look of Polished Diorite. It was the main block for my floor in my 1.8-pre3 world I Think the idea that the direction is what changes what stone type is produced is very interesting, And I think it would be great to play around with.

Also, there's probably a reason these blocks are rare. (Not sure why they would need to be, because they're essentially a building block...), however I think Mojang would rather keep them that way.

If regular is Vanilla then what flavor is your Minecraft?
I'm not particularly sure how this works logically. Why would water touching lava from the north side create a different block than, say, the east side?
Also, there's probably a reason these blocks are rare. (Not sure why they would need to be, because they're essentially a building block...), however I think Mojang would rather keep them that way.
Rare? Just look around in a cave and see how "rare" they really are; in fact, they are each three times more common than dirt (10 veins of each and dirt, but dirt (dirt pockets, not the surface layer) generates over 3x the y-range, so it is only 1/3 as densely packed in the range of the stones), with several hundred blocks of each in a chunk, by far the most common "ore", large veins also makes it easier to find. You can also craft them in older worlds without having to explore far out in new chunks (2 cobblestone + 2 Nether quartz = 2 diorite; 1 diorite + 1 cobblestone = 2 andesite; 1 diorite + 1 Nether quartz = 1 granite) and Nether quartz is easy to get in large amounts, even without Fortune.
As for the OP's suggestion, it doesn't really make much sense (the different directions), although since the default stone is something like limestone (after all, that's where caves usually form IRL) and the new stones are igneous rocks, formed by volcanic activity, it makes some sense for them to be formed from lava. Maybe instead have it depend on the depth of lava? In any case it is easy enough to make it, as mentioned above (you can also use the customized world settings to make it more common if you want).

Rare? I have double-chests full of each type and I only play in a small area of the map. That's just from clearing out section of caves I've found to get ores. Nevermind the fact there is already a crafting recipe for these new stone types.
Even though this sounds like a good idea it sounds really weird and just doesn't make sense that it depends what direction you're facing. This might ruin maps like Skyblock in which you have to make a cobblestone generator. I might support this, but it doesn't make sense. Even though Minecraft isn't supposed to be realistic this is just really odd. Plus those rocks aren't that rare.
Cobblestone isn't rare at all? The game mechanics are not designed around custom maps... the custom maps are designed around the mechanics. Im sure Skyblock would adapt.

The thing is, before 1.8.5 rolls around, Mojang will likely have Andesite, Diorite, and Granite furnaces, tools, and whatever else. At the very least, I'm sure that they will at least be usable in the Cobblestone crafting recipes, with the Polished version doubling as Stone.
I doubt that. They are treating those stones more like marble than actual stone. If anything I would think maybe step and slab variants might be what we get.
