If you are 10,000 blocks away from a stronghold and you run out of eyes, it's time you set up a base camp and got some more eyes. There's nothing wrong with more work, it makes the reward that much more satisfying.

They're never anywhere near that far from spawn. Return to the spawn, then start using the eyes. You should never even look for a stronghold that could be 10K blocks away. If they never broke, you'd also be able to find the stronghold with just one (cheap). Though you can technically always find them with two if you're extremely careful.

No, all 3 strongholds have are at a set distance away from spawn. The farthest a stronghold can be away from spawn is 1152 blocks, and all 3 of them spawn in a way where they form a triangle with spawn in the middle.
yes they do, I have an eye of ender break every two to three throws.
You're just getting unlucky I guess, ender pearls have a 1 in 5 chance of breaking according to the wiki. I wonder if how you throw it makes a difference. Try to throw them straight up in the air, free of any obstructions. That's what I did and experienced minimal breaking.

Some things are suppose to be hard, and beating the game, well, come'on, that's definitely suppose to be hard, anything less harder would make it less fun and less of a reward.
Nerfing the games process of beating the game? (such as your suggestion does), now that'll take away the reward factor and fun. With this implemented it'll be like; "meh, I beat the game, so what?, it wasn't all that difficult anyway... I only needed a few eyes of ender" however when there's a challenge like it currently has, you'll be like; "yes! I finally beat the game! I'm so proud of myself... ALL my effort an eyes of enders paid off!".
And I cannot support that being taken away. No Support. Challenge = good, especially optional challenge.
Eyes of ender definitely shouldn't be unlimited, and them breaking adds more of a challenge. Otherwise you could find a stronghold easily with just 1-2 ender eyes. Plus, there are 3 strongholds per world and all of them must generate 1152 blocks within spawn.
It'd be overpowered to have just 1 Eye of Ender able to be used for all eternity. I could settle for a reduced chance of having them break, but taking that away altogether is too much.
What if instead of breaking randomly they had a small durability bar that goes down by chance. (like only" breaks if it fails 3 times or something) and you could also repair them by crafting them together. This gives more agency in the player within the actual breaking mechanic rather then just being a thing that happens randomly.
If you're on Xbox, exit without saving and try to remember where it broke.

1- Finish the mod API
2- Give brains to villagers (make em more usefull)
3- Add ambiance: birds, fishes, bugs, crabs on beaches, monkeys in jungles...
4- More plants! Aquatic, any fruit tree, bushes....
5- Ambiant sounds!

Also MC is 30 million blocks across from spawn.
If this was implemented, you would only need 1 eye of ender to find a stronghold. That completely destroys the challenge of getting enough to find it.
Also, a stronghold can not be millions of blocks away.
According to the Wiki:
"All strongholds are located at random positions in a radius between 640 and 1152 blocks from the world's original spawn point".
Which means that the farthest away a stronghold could be is only 1152 blocks.
Besides, Eyes of Ender don't break often anyway, I recently searched for a stronghold on my world, and only two eyes broke.

Obtaining the blaze powder and ender pearls is the challenge. It's unnecessary for one in five eyes of ender to shatter.
