I really, really like the idea. Also, here's a mob idea. IMO, the Abyss should be a bit more of an Abyss.
Angler Fish
10 health points (5 hearts)
Neutral
The Angler Fish is a neutral mob, found ONLY in the Abyss biome. They will be automatically hostile towards cuttlefish, and if a fish, clownfish or salmon is dropped on the ground, they will flock to it and eat it up. They can be tamed similarly to Cuttlefish, but its a little bit trickier. They're not as easily frightened by moving around. Simply hold out a piece of fish, cuttlefish or salmon, and they'll slowly swim towards you. As it gets closer, its lure will start to glow brighter. When it gets close, it must be fed 1-5 fish to be tamed. However, when you feed it the last fish to 'tame it' there's a chance it will simply attack you now that its eaten its fill. It would be about a 55% chance of being tamed, and a 45% chance of being hostile. Once tamed, you can pick it up and place it like a cuttlefish in a body of water, and can be fed like so to grow larger (They originally start out quite small, they're very small animals). The larger they are, the more they raise the light level around them, until their health increases to 20 health (10 hearts). Then, at their largest stage, they'll start being of use. When hostile mobs (Other then creepers) are nearby, the angler fish's lure will begin to glow brightly. There is a chance that any nearby mobs will walk into the water to investigate the light. Once in the water, the anglerfish will being to attack them, dealing 4 points of damage (2 hearts) on Normal (Which is the same it would do against a player), and the mob will rapidly flee out of the water before it would resume attacking you.
I didn't mean that clams were too small to flee, but the fact that in real life, clams can't move, so it'll be very wierd for clams to be floating around in minecraft.
Though, one thing I can agree on your mobs is your AI that they swim away like ocelots when you go near them. It could be applied t current sea creatures like squids and guardians. It will definitely improve the animal AI

The underwater biom is a good idea, but maybe more rare... like maybe a bit more rare than a masa.

I mean, I would like to be able to look down into an ocean sometime and say "Oh shoot, that's reaaally deep", like standing by the side of a ravine and saying "I'm screwed if I fall". Logically concluding that they should be as common as ravines (Interesting logic, no?)!

They should prowl the Abyss, providing glowing balls of light, floating in the water. For a spooky effect.. Maybe three brightness. But they shouldn't be hostile. Nono. If the cuttlefish already does it, we won't be needing another like it.

Read my first long post on the topic, I had a few criticisms and suggestions. I know, it looks like tldr, but please be patient and read it!
SUMMARY: An abyssal fortress (Will need renaming! Sounds too much like Nether fortress!) and abyssal fog.
HOWEVER! The "boss" I mentioned in the long-post, could be like a megladon (Look it up to know what it is). The guardian of the Abyssal Fortress. I will need help on the idea though.

I like most of the ideas, but not the camoflaugr (It would never work in Minecraft) Or taming cuttlefish (Its the kitty from Mo' creatures, pretty much) Also, clams should be very slow (They are IRL) and the clam chowder should only restore 4 hunger thingys, or maybe even as low as 2.
