There is already a hunger mod for SMP, play with it and you'll see how much of an annoyance it is. But, i do like the way you described it! Also, might there be a disable button even if your not on peaceful?
Anyways, I think Notch mentioned something about a realism slider that included hunger and thirst, so lets hope its something similar to this!

it sounds great, but i would like to see a more complex version of this. for example, bread isn't more satisfying than a pork steak is it?
how about a bar, instead of the icon, that goes as slow as your method does, but different foods effect the bar differently.
when the hunger "bar" is absolutely full, it will show as blue, and no matter what food was eaten to make the bar blue, you will stay full for 10 min.When you are full you feel the health and energy running though your veins, and are more energetic, opposite to the starvation nerf, all destruction of blocks is 25% faster, including digging and cutting wood. your hits to mobs is also 25% more powerful. (a possible 25% increase to walking speed?) this will encourage keeping hunger mode on.

After the 10 min, the bar slowly starts to drop, one quarter of the total bar per 10 min. the bar will show as green, no buffs, or nerfs will happen to your character.

As the bar goes down, you get more hungry, and still no buffs or nerfs will happen.

As you get to starvation mode, you begin to feel weak, that's because you are. all destruction of blocks, mining, digging everything is slowed by 25%. Also, damage to other mobs is decreased be 25%, (maybe even movement speed?)

When the bar is completely empty you die. simple as that.
the total process from completely full to death is 5 days.
i also mentioned different foods effect your hunger differently depending on the type of food. its easy to figure that out. for every 4 hearts the food heals, one quarter of the bar is replenished. that means pork steaks replenishes 1 quarter of the bar, bread replenishes a bit more than 2/8 of he bar, so does raw pork, ect
the hunger mode can be turned on and off, however no matter what, when you turn it from off to on you are moderately hungry (bar is half empty).
i believe a bar, instead of an icon is more accurate, and the replenishment is more realistic.
I would actually prefer this way of hunger, that way there are some benefits to keeping hunger mode on.

This thread is specifically about a system for hunger but I do like the idea for energy and having beds. You should probably make another thread for that.
It looks good, but doesn't add much to the game to be honest. Not only that, but it cramps up the UI as well.
Using the system I wrote in the OP, the hunger icon doesn't even appear until you start to get hungry, so I don't see how this would cramp the UI. Whether or not it adds to the game, well, that's your opinion.
interesting but here's a problem. a human being can go without food for several weeks. ignoring the hydration, and mental problems (a human can only go 72 hours with water or some other means to stay hydrated and someone determined on surviving lasts longer then someone without the determination) hunger shouldn't be a major problem until at least the second weak. this not to say that there would not be drawbacks to not eating. some of these drawbacks would include moving slow, alerting mobs due to stomach growling (Attracts aggressive mobs and scares away passive/neutral mobs), not being able do as much damage as you normally would, etc. these conquenses grow in effect as time goes by without food. i have a chart to show the drawbacks and when they happen (Previous effects still remain unless a more advance for of a previous effect is induced)

On thing I would like to suggest, however, is that you DO NOT heal when you eat, but instead you slowly heal over time as long as you are in the top 2 states of hunger. Also, by heal slowly, I mean about 5 hearts every day. Basically, to regain 10 hearts, you would need to wait 2 in-game days, also known as 40 minutes.
I like this idea, but I don't know how others would feel about it. It diminishes the value of rare/expensive foods, things such as golden apples or mushroom stew. If Notch implemented a system like you said, then he should add some kind of non-food healing item, like a medkit.
well, perhaps mushroom soup/apples/golden apples would heal you as well as raise your hunger level, but of course not by too much. Mushroom soup wouldn't heal you five, but would pretty much fill your hunger bar and heal 2 or 3 hearts. Apples would completely fill the hunger bar, but heal you 5 hearts. Golden apples would still heal full though, because they are so incredibly difficult to get.

2. 3 min. would be passing at times ten the normal speed so you would only notice 18 sec. pass
3. its supposed to be semi-realilistic, on my point is that a human dies after WEEK of starvation. hell there a people who have lasted about weeks before dieing
