I like the Sea Moa, but it seems too similar to the normal Moa to be believed. I don't know if I'm explaining this well, kind of hard to explain. Maybe if it would spawn in some prehistoric realm or something....

lol thats exactly what I was thinking. I am actually going to make a race track on my next file for racing mounted mobs or even vehicles if they are ever made. I doubt vehicles though.
I think it may be time to look at the Moa variant drops:
Cockatrice: We've worked this ones drop to death and I think it's fine the way it has been discussed.
Moa: I think the meat would be the best way to go. The Moa's meat could be a better food than pork (seeing as it would be rarer). As I don't know the statistics of the food in Minecraft, I'll let other people work on this.
Sky Moa: Just as with the Cockatrice, I believe a feather capable of making a special feather would be good). Maybe it could produce an arrow that travels further, moves faster or has more knock-back to the target.
Sea Moa: I think it should drop a Fang. The Arrow would do more damage than a normal arrow, and would be able to travel through water as if it was air.
These are basic ideas, so feel free to work up from here.
as much as I would absolutely love to see these, should improve the mine carts before adding anything like this.
as powered mine carts are useless (can't go up 1/1 slopes and goes no faster than walking) and the booster glitch is likely to be fixed before/during beta.
these things would make mine carts absolutely obsolete if they are added before changes to mine carts are made.
(but I would still love to see these, don't get me wrong)
minecarts need to be fixed mainly in the link system, my carts just bump each other along instead of shunting, that is annoying
also powered minecarts need to have an easier way to insert fuel (right click and open a interface which says fowards and backwards, you insert the fuel into the one way you want to go etc)
anyway, moas wont make minecarts useless and some people like to sit back and relax as they move to location to location
These wouldn't make minecarts obsolete. These are fragile, require user input, and can't carry any extra material. Minecarts can.
well if you travel only during the day and are inside/in mines at night.... leaving these things at the door while you explore.... these things traveling at even 2x walking speed (as suggested) then they would make mine carts obsolete when notch gets around to fixing the booster glitch, like he has said he will...
you could still have the track for the chest carts, but powered minecarts would be useless since you would be able to simply push it faster. Without boosters, you have to go down 25 blocks on 45 degree slope before you hit 2x speed.... and if you go up even one, then the speed is almost halved.
yeah but also there is the possibility that the booster tracks and slow down tracks will be implemented, this way we get a legitimate way of boosting and halting

Frankly, minecarts are more for large frequently traveled complexes where you want to follow a certain path very quickly. The the Moa, you'd loose speed when you made turns and you would have to have three or four tile high pathways in your mine to ride one around in there. I think minecarts will be ok.
The Moa is really a traveling method for discovering new areas quickly and easily. Plus it can be used for multi-layered high octane jousting competitions!
It's a shame none of them have been implemented into the game, either officially or via modding. On that note, have you ever thought of talking to someone like DrZhark (the Mo' Creatures mod creator, or even any other tallented modders, for that matter!) about possibly having some of your ideas included in the game?
Name: Buff Moa (better names welcome)

Use: After being saddled, a buff moa can have a chest attached to it via right-click. The chest is accessed through a Simple menu with "Ride" as one option and "Store" as the other. A Buff Moa moves slower than a normal Moa (however much is up to balance. I'd say 25% slower than an average Moa, but that's just me.), and has less of a jump. Ramming a mod deals more damage, though.
Model: Like the normal Moa, but with thicker legs and neck. Textures are up to you.
Basically a Moa for those who prefer to play nomad, never making a permanent residence. Just remember to keep it close in the wild, and offload its stuff when at home; if it despawns, you loose anything it was carrying.

We already have magnum arrows, aerodynamics and weight arrows in the making
Those do almost exactly what you said in the same order
One arrow which can do that would be FARR to overpowered
