Okay, hear me out. This isn't an overpowered suggestion for escaping mobs or escaping death by falling. It's better suited for exploring, and certain monsters can do it too. For starters, lets talk about how you start climbing.
By holding a suitably comfortable key while airborne facing a near enough block, you can start climbing. Different blocks have different grip, so while you can easily climb tree trunks or cobblestone, dirt and sand will slip between your blocky, blocky fingers. Grip is mostly linked to breaking time, with harder to break things being easier (faster) to climb. Harder blocks have less friction though, which will be detailed later. Some blocks have special grip, like obsidian, which, being a sort of glass, is too smooth to climb, and has little friction. Movement while climbing is also different. Friction, for example, rules. If you grab a block while falling, you will retain your momentum and slow down according to the friction of that block, so while smooth stone will provide little solace from spontaneous stopping, dirt lets you really dig in and slow yourself down. Friction also means that you will slowly slip down on some blocks. The same soft nature of dirt that lets it save you from falls also means that you have to constantly move upwards if you don't want to slide down it. Grip is averaged between all the blocks the player is touching, and/or occupying.
Jumping while climbing will shunt you away from the climbed surface with the force of a normal jump. If you touch the ground while climbing you will automatically stop climbing. While climbing you cannot break or place blocks, and can only use tools if you aren't moving.
But what about the ladders, you say? Why, that's simple. Ladders have the best grip and friction in the game (unless one of the Nether blocks is so appointed), and allow one to start climbing without jumping. Ladders will break if you grab one while falling too fast, though. They are only wood, after all.
But wait, you say, what about animations and the gui? Well, that is a tricky matter. Lets start with the gui, as that is the easiest to explain. It's invisible while climbing, only the hotbar being visible when you stop moving. You cannot open your inventory while climbing, and can only change tools when you can see the hotbar. As for animation, well... You sort of look like you're crawling up the wall in third person when seen in third or fourth person. Oh, and while climbing, you cannot see your item or arm until you stop moving. And your item isn't in your hand in third or fourth person until you stop moving, at which point your arm hangs by your side in the traditional minecraft pose and your item appears.
But what about the mobs? Well, they can climb too, sort of. Pigs and cows and the like, can't but spiders, zombies, skeletons and zombie pigmen can. Spiders have a special animation when they start climbing, so they only jump when confronted by one block high walls and when attacking, and can also climb ceilings. Small one block overhangs on walls prevent them from climbing so, ceilingless fenced areas are still possible. Zombies, pigman or not, have slightly less climbing ability than the player. Skeletons have more, though.
Maybe slime balls could be smeared on blocks to make them have little friction and grip. Perhaps string could be crafted into webbing that could increase friction but decrease grip.
Okay, I have a bit more free time, so I suppose I should add a list of special grip blocks;
Obsidian: No grip and low friction. You'll just slide off if you try to climb it.
Cobblestone: Higher grip than normal stone.
Mossy Cobblestone: Higher grip than cobblestone.
Slowsand: Very high friction, but minimal grip.
I think there should just be a certain block that you can climb indefinitely upon exaclty like a ladder. If you could climb on any block it would be easy to just scale down solid cliff faces. Though it might make castle building more interesting. Japanese castle walls were made to be impossible for people to climb up.
The block could be stone with vines grown on it and it would be generated naturally on certain spots of the landscape.

I always thought of spiders being to climb ladderless walls, and btw currently creepers can climb ladders? (read minepedia) also i think that you should see your hands climbing when climbing stuff (anyone ever got annoyed by that in hl2?) and maybe there can be steel ladders? (more stable) And maybe monsters have a 20% chance of knowing how to climb ladderless walls, and spiders have a 60% chance? Also would be cool if you can stay on a block for a certain time, Example: you can stay on cobble stone for only 30 secs or else it will start pushing you off.

Spider should be able to climb unladdered walls. Creepers should not be able to climb at all, given the lack of suitable appendages. Seeing your hands while climbing sounds rather hard to code, and while steel ladders do sound fun they'd take up a whole crafting recipe and a block type for little purpose. I don't quite understand what you mean by "...knowing how to climb ladderless walls". Blocks with low friction will have you slide down them if you dont keep trying to stay up.
I would say, can't climb glass or any meneral blocks you make as there all too smoth...
