I'm not big on huge lists of additions, but our new oceans certainly need something to liven them up.
Crabs: they scuttle around on the bottom, and are semi-agressive (ignore you and other mobs, fight back if they're attacked).
Sharks: the standard water predator, they can attack passive aquatics and players alike.
Tuna: a basic familiar fish to act as the pigs of the sea for sharks to nom on.
Kelp: basic flora of the oceans, grow upward with vine-like mechanics (not past the surface obviously), and spread in small clusters like mushrooms.
Coral: found in clumps in shallow oceans waters, available in a rainbow of colors like wool (no purpose necessary, just to liven the place up).

Idea: Coconut palms that have a total of 8 leaf blocks in a plus pattern at the top with a small chance of dropping sapplings from leaves and spawning a coconut green casing for a block next to leaves every few days that can be placed on the crafting table to get a coconut (edible) or even used for coconut milk in place of cows milk for making cakes.

It would be nice to see some fruit/nut bearing trees in general. The coconut palm would be a nice addition to Ocean biomes, to give tropical islands a way of producing food (seeing as how no animals will spawn there).

strongly support underwater caves and clay to make up abyssal plains especially
oceanic geography has many features that could be added with ~ little work
-mountain ridges/faultlines/ deep trenches good spawn a slightly changed aggressive squid (collossal)prob just a mod
-underwater volcanoes could come before regular volcanoes and create island chains- possibly an porous type lavarock or pumice type stone
abyssal plains- sea cucumber mob/ sea tubers
i like the idea of a deep sea vent-not specifically for metals produced but would look awsome\ ideas/thoughts?
beaches could involve salt crystal growth in ^ porous rocks & provide openings for beachrock or dunerock
an underwater canyon formed by uw landslides would be cool
please add!!1
some sort of underwater/atlantic ruins would also be cool
a lighted helmet (maybe lightstone)would be a simple underwater lightsource
a wet cave system below an ocean would be an awsome spot for a sea monster( a giant catfish thats half way in mud/water, crustacean monster/ or just passive mob,
there should be some form of aquatic mammal- whales, elephant seals or walruses i hope/ + maybe communication w/ dolphins lulz
*not sure if any^ have been mentioned besides trenches

Someone said add salt water, and using a bucket purifies it. Well, how about adding salt? By purifying it, you would leave behind a salt pile (looks like snow). use a shovel to make it drop salt, which would look like re-textured redstone. Add it to foods (like porkchops, chicken, and beef) to make it heal hearts and hunger.

I would really, really like to see more done with the oceans, but I think adding too many ocean-specific crafting recipes shifts the focus of the entire game a little too much. Maybe a consumable that refills your breathing meter until you can build an underwater airpocket (rather than all the scuba/diving gear). Also I think 30 blocks is too deep for full lighting, as many bays and such would become completely clear.
Also I LOVE Liesye's idea for shipwreck dungeons!!!

I dont know how but make water not flow into these by placing a see-through transparent block between the lava and water
