I like the idea of a slick material to create slippery areas. That could be a cool feature.
The inkwell recipe sounds great! I'd love to see the ink used in a craftable cartography feature in game. Writing books would be cool too.

Seriously, though, your ideas are INSANE! All of them are extremely well-thought-out, have great design, and would fit perfectly into the Minecraft world! I'm surprised someone hasn't hired you yet.
I was thinking... could you possibly make a Colossal Squid mob? Something that would work well with Oceancraft, this mob would be gigantic (think 20 meters in length, as based off of this article), and be an extremely rare spawn, only appearing in the deepest parts of the ocean. I think it could be hostile, though it'd be interesting to see one of them up-close if you didn't hurt it. I'm not sure about drops (possibly a large amount of ink?), but I for one wouldn't want to kill this thing.
Imagine swimming in the deep sea when you see the sihlouette of one of these things in the distance. Instant shivers for me.

Theres nothing more horrifying about a giant, ship sinking, tentacled, sea beast.
