There are harder things then diamond. And this is a game. Just because in real life not alot of things can break diamond, doesn't mean it should be that way in a game. And if they did last forever, it would break the game.
Totally indestructible tools break the game in ways I've outlined before. You no longer have to work for diamond. Before, the default tool grade was stone, but now you can make everything out of diamond and never have to look for ore again.

I can guarantee that diamond can be broken with a hammer.
Um...no. Diamond is the hardest natural material in the world and the only way to cut a diamond is to use another diamond. Go ahead and smack a diamond with a hammer, but if's a real diamond (not that imitation crap found in 90% of stores) it has a better chance of damaging the hammer.
To answer the topic: No, they shouldn't because then you would have diamond everything and the game would then be too easy. The map is nearly unlimited in material (hello, 8 times the surface area of the earth) so there is plenty of diamond, you just have to find it.
Diamond can be mined because the whole block isn't diamond, it's rock with diamonds in it. You extract them from the rock and use it for tools. Now diamond blocks don't make much sense, but then again it's a GAME.
There's not much reason to believe that the diamonds found in-game are 100% pure diamond.
And even if some force of impact is taken by a hammer in striking the diamond, it could still conceivably break. There's a reason everything important hasn't been made out of diamond already: It's because it's not totally indestructible. It's neither realistic, nor good for game balance.

No. Been suggested many times before. If you have infinite tools, then why bother mining? Maybe you could get a bucket, a record player, armor, but what then? That seems like a sort of ending. It's better to have them come and go... Eventually, your diamond tools run out and then you have something left to obtain again. Keeps the game interesting.

No, if you took your standard claw hammer and beat on a diamond you'd turn it into useless powder. Diamonds are the HARDEST natural substance on earth, but they are rather brittle. Harness is how difficult it is to scratch a material. A claw hammer has significantly greater mass and when you swing it it gains tremendous amounts of kinetic energy. More than enough to powder even a pure diamond. That's not to say that the striking face of the hammer wouldn't get a knick in the process depending on how the diamond was sitting, but the diamond wouldn't stand a chance.

Wrong highly pressurized water can also cut diamond
Its true that diamond cannot be broken accept with other diamond, but for the purposes of the game i am happy with it lasting a long time, but not forever
On topic, it might be interesting if upon breaking a diamond tool, it disintegrates into one or two diamonds. You still lost a diamond, but you can collect the broken shards of tool to use on another one.
