There is no actual way to make any structures more common in Customized; you have to use Superflat in order to make villages, mineshafts, temples, or strongholds more common, or use a single biome for the entire world, which will only affect biome-specific structures with obvious disadvantages. You also cannot change the way caves generate so making the ground deeper has little effect on the amount of caves (which is still far less than in versions prior to 1.7; mineshafts are also only 40% as common since then) since they mostly generate well below sea level. You didn't even make dungeons more common (I recommend setting it to 16 to replicate the dungeon frequency in versions prior to 1.7, where you had double the chance of running into one when exploring the same length of cave since they generated over half the y-range). Also, by doubling the range of ores but not their count it is actually more difficult to find most ores, unless you go caving, where diamond would be around 5 times more common compared to iron and coal (I'd actually suggest scaling up rarer ores by height above y=10, the level of lava, as I did in a mod that tripled the ground depth. Either way, without caves themselves scaled up you'll find a lot more compared to coal or iron).
(as you can tell, nothing annoys me more than the lack of customization of structures and caves, despite being very easy to implement, and actually already mostly implemented in Superflat, but why make a Superflat world when you want a real world?)

I think villages tend to be a bit bigger and more plentiful due to the generation changes in 1.10.
