According to Amidst and Slime-finder that place where you are standing is not in a slime chunk.
You are, however looking into a slime chunk since you are facing toward the northwest and the two slime chunks bordering that location are west of you.

Yeah, I marked the corners of the room according to the slime chunk finder. I'm standing a bit back just to show a screenshot of the room with its several layers of floors. And the entity count was low, so that wasn't my issue either. Hmm. Maybe I'll dig down to bedrock and see if that helps. I know the wiki says <40 should be good.. but since I'm seeing zero spawns (standing between 24 blocks and 128 blocks away of course), I can't think of anything else.
Slimes will spawn at their best if you separate each layer with 2.5 blocks, (use top slabs as platforms) and at lighting above 7. also light up as many caves as you possibly can, as there is a hostile mob cap for areas, and it is best to only allow for slimes only. Stand a good 30 blocks away from the edge of the chunk and afk for about 10 minutes to an hour, and you should have at least one slime in there. Please take note that slimes may not spawn within torches or on glowstone, or any transparent full block. (I'm not sure of the validity of that statement, but it's best to be safe, but top slabs do work)
Put in Iron Golems to kill other mobs that aren't slimes, and have a room with named and caged villagers (so they won't despawn) and so the zombies will get to them. If you can't make IG's, then make pitfalls by the villagers outside the cage to kill zombies in lava/fall trap/hoppers etc.

Thanks for the tip. I saw another poster who put an iron golem in a cage set on top of a cactus. The slimes would move towards the golem, trying to get it, and hit the cactus. Surrounding the cactus was hoppers that catched the slime loot and dropped it into chests. I might go that route. But... I need a slime to spawn first:)
My layers are 3 high since I'm lazy and didn't want to make slabs. Will that decrease the spawn rate significantly?
OK, I just saw my first slime after digging down to layer 11. Maybe the lower you go, the better the chance? Regardless, I might as well hit bed rock and make a ton of layers above it. I double checked my seed, and it was correct, so I'm in the correct coordinates.
I guess slimes are just super rare compared to earlier versions of minecraft?
not at all. just has to be below layer 40, and a light level of 7 and up. You can check your debug screen by clicking "f3" on windows, or "fn+f3" on mac. Hope i helped!
also, make sure to put golems on slabs so that they don't get killed by cactus! xD
