Went with a random generated world that put me on an island. I went exploring and went due east across the water and came to the main land mass in a desert biome. Then I came upon a massive mountain oasis that shoots out of the middle of the desert and rises clear above the clouds! Next to the oasis is a desert village with a blacksmith. Exploring further east, I came across a natural pit that very quickly leads to the beginning of 2-connected abandoned mines full of goodies. Going more east, I ran into two more villages (village 2 may have had diamonds in the blacksmith, cant remember now).
As I explored around further in this world, I documented 2 temples, 2 surface dungeons, and 4 villages. I'm adding a MCMap graphic with labels showing where everything is. I setup camp in Village 1 while I plan out how to build my home throughout the mountain oasis. Since Village 2 and 3 are so close in their Z axis, it was easy to build a rail line between the 3 villages. Between Village 1 and Village 2 is the pit to the abandoned mine so I put a minecart stop there as well.
In the surface dungeons and temples, there were diamonds, horse armor, and other typical goods. Anyhoo, its a cool map and worth checking out. If you are a purist on survival, your biggest challenge is going from the spawn island to Village 1, but you should be able to hit it before night. On the graphic, the villages are a little larger than how they start out, I added to them and built city walls. Enjoy!
This seed is a lot of fun, and I've found quite a bit in the dungeons, but are there any horses? I swear I've been all over the map, and I haven't seen one yet.
My guess has always been that horses spawn differently for each person. I also had trouble finding them on this map, but did eventually find them. On the map I posted, they were to the southeast (according to direction sense in game) of what I labeled "Village 3" (1570, -200) in the grassy area across the river. Hope that helps!
My experience has been that if you use the same seed with the same vanilla version of Minecraft (or possibly with the same mods) you will find the animals in the same places when you first get to a location.
I created this world and teleported to village 3 to see if I could find your horses and haven't yet.
HOWEVER, I did find a large ravine (long, not deep) that has an exposed abandoned mineshaft at 1654, 43, -66 and a cave entrance at its east end.

I also found horses near village 4 at (1705, -1060), but I think I prefer the location of village 3. Just seems easy to link villages 1,2,3 with a road/rail. Since I am building my permanent home in the desert oasis in the mountains, I am using village 1 as my main resource village with rabbits and pigs. Then I put cows and chickens in village 2 and plan to build stables in village 3.

EDIT: OK, I found 5 donkeys at 1615, -35.
I've only got one mod so far, but lately my computer won't run it without it lagging and freezing up which it didn't do before. I might have to do some cleaning.
