What happens is that I want to make a command that what it does is that wherever it flies, it destroys the blocks that I assign it. I know something about that that can be put with the execute but I don't know what command I am in version 1.16.5/

You're going to have to be more specific. From what I understand you have something flying which destroys specific blocks near it.
Let's assume your 'something' is a snowball and we want to remove just oak leaves. In which case we need to simply run a command which fills a small area around the snowball.
/execute at @e[type=snowball] run fill ~0.5 ~0.5 ~0.5 ~-0.5 ~-0.5 ~-0.5 air replace minecraft:oak_leaves
If any entities or blocks are wrong, you can simply change them. For example if you wanted this to apply to a player, just replace the @e[type=snowball] with @a[type=player] or simply @a. if you instead want to remove diamond ore and not oak leaves, replace minecraft:oak_leaves with minecraft:diamond_ore.
