I've seen many datapacks which add new recipes and advancements, but I cannot understand how to remove / prevent players from achieving default advancements and using default recipes.
Is there a way to block players from using them?
Without editing any files I think the easiest way may be to use the recipe command to lock the recipes for the players. See more info here: https://minecraft.fandom.com/wiki/Commands/recipe
Gives or takes all recipes from a player.
recipe (give|take) *
I am not sure about advancements, but if you just want them hidden and don't actually care if people still get them then this may help:
gamerule announceAdvancements false
