For a map I'm making I want to make it so that mobs can drop specific items, which I only partially understand. Right now, I know how to give a mob equipment and I know how to make it drop one of them with a % chance. However, I want mobs to also be able to drop items that are not equipped, as well as make it so they don't drop their default items.
As an example, I might want to make a zombie that never drops rotten flesh but does drop 4 - 5 flint. I'm not sure how to do that.
Modifying the exact amount of XP that drops would also be useful.
Look into death loot tables... i dont know much more than that but once you work out how to set one up you can use https://mcstacker.net/ to make the correct summon command leading to the loot table.

As Cubic said, make a loot table using mcstacker, it has buttons that tell you what each part is.
You need a datapack to utilise and store them though (since 1.13)
Do you happen to have a good guide on how to use MCStacker? And where in the datapack would I put the stuff I got from MCStacker?

There is literally a button called "Loot Tables" on the right side.
Also you would put the loot table in the loot_tables folder of the datapack
