I am trying to make a minecraft Skyblock map In Vanilla MC. I have been successful with almost everything accept this. I am trying to make custom mob drops and also make it so mobs don't drop their original drops. Is their any practical way to do this.

in 1.12 it is much harder than in 1.13 (because of data packs)
but the only way i can figure out here (in 1.12 so) is with to summon the entity with the empty loot table (as shown upper), then summon the items you want when you detect that specific entity with 0 lifepoints

/summon zombie ~ ~ ~ {DeathLootTable:"minecraft:empty"}
Something like this.
is their anyway not to do it in a summon command
another thing i get often is when putting a mob in in the entity data command it says Invalid argument [Any mob I put in]

If you don't do it with the /summon command, how do you even make custom mob drops?
Also, there might be errors in your /entitydata command, it's best if you show us (ofc, you can hide the names if you don't want to spoil it)
